Kneading the Dough
First, boil a kettle of water to prepare for the dough kneading process. Once the water is boiling, gradually pour the water into the bowl of flour, making sure to use a spoon to mix the dough well until it thickens into a chewy mass.
If you accidentally add too much water, just add more tapioca flour until the dough forms a chewy mass that does not stick to your hands.
- To prevent the dough from sticking to the bowl, you should blanch the bowl with boiling water to warm it up before kneading the dough.
- The water for mixing the dough must be hot enough; otherwise, the dough will become mushy. You can fix this by boiling the water again, then adding it to the bowl as mentioned above, adding a little dry flour and kneading until the dough is chewy again.
Shaping the Tapioca Pearls
After kneading the dough into a smooth, chewy mass, you proceed to shape the tapioca pearls by rolling the dough into long strips, then using a spoon or knife to cut them into small, evenly sized pieces, then roll them into balls.
The portion of dough that you haven’t worked on can be placed in a bowl, using plastic wrap to cover the bowl tightly to prevent it from drying out.
Cook Milo Pearls
You place a large pot of water on the stove, wait for the water to boil vigorously, then drop in the shaped pearl balls while gently stirring with chopsticks to prevent the dough from sticking together or to the bottom of the pot.
Boil for about 10 minutes on high heat until the dough is cooked and floats to the surface, then reduce to medium heat, simmer for another minute, then turn off the heat.
Cool Down
After taking the pearls out of the pot, immediately place them in cold water to keep them crunchy and chewy.
Next, blanch the pearls for about 1 minute, then remove them to drain, and finally mix well with 2 tablespoons of sugar to absorb the sweetness, and you’re done.
