  • Black sugar is a type of sugar that has not undergone refinement, allowing it to retain the natural color and sweetness of sugarcane compared to other types of sugar.

How to make Black sugar tapioca pearls using rice flour

  • Cook black sugar syrup

    First, add 45gr of black sugar and 62ml of hot water into a bowl, then stir well until the sugar dissolves. After that, cool this sugar water in the refrigerator for 10 minutes.

  • Cook and knead the tapioca dough

    Next, add 68gr of rice flour into the sugar water and stir well until the mixture is smooth.

    Then, continue to add 34gr of rice flour and mix well until the dough sticks together. At this point, transfer the dough to a kneading surface until it forms a homogeneous, smooth, and elastic mass.

  • Shaping the tapioca pearls

    Use a rolling pin to flatten the dough, then use a knife to cut the dough into small square pieces, about the size of 1/2 of a small finger.

  • Boiling tapioca pearls

    Boil 1 pot of water, then add the tapioca pearls to boil, using a ladle to stir gently for about 30 seconds to prevent the pearls from sticking to the bottom of the pot.

    Place a pot on the stove, add 92g of brown sugar and 123ml of water, then cook over medium heat until the sugar water thickens slightly.

How to make Black tapioca using rice flour

  • Cooking sugar water

    Put a pot on the stove, add 60ml of water, 50gr of brown sugar, and stir well over medium heat until the sugar dissolves and boils, then turn off the heat.

    Put 67g of rice flour and 30g of cocoa powder into a large bowl and mix well. Then, pour this flour mixture into a pot of syrup.
