Ingredients for Mung Bean Mooncakes using an Oven For 12 cakes

Mooncake flour 200 gr Pre-cooked mung bean filling 540 gr Egg yolks 3 pieces Sugar syrup 100 gr Wheat flour A little Cooking oil 3.5 tablespoons

How to Cook Mung Bean Filling for Mooncakes

  • After cooking the mung beans, you blend them until smooth using a blender.
  • Next, place a pan on the stove and add all the blended mung beans, stirring evenly over low heat. Then, gradually add 4 tablespoons of cooking oil, and continue stirring until the mixture is well combined.
  • Next, dissolve 1.5 tablespoons of wheat flour with 3 tablespoons of water and add the flour mixture to the pan with the mung bean mixture, stirring until the mixture forms a non-sticky mass and is not runny.
  • Finally, just transfer the filling to a bowl and let it cool.
Note: You can adjust the amount of cooking oil, flour, and water according to the amount of mung beans you have.

How to Make Mooncake with Mung Bean Filling Using an Oven

  • Mix the Dough

    You gradually add 200g of mooncake flour, 2 egg yolks, 3.5 tablespoons of cooking oil, and 100g of syrup into the bowl and mix well for about 10 minutes. Then, you cover the bowl tightly and let it rest for 30 minutes.

    Tip: If you don’t have a mixer, you can mix the dough by hand. To prevent the cake skin from becoming tough after baking and to achieve sharp patterns, do not knead the dough for too long.

  • Forming the mung bean pastry

    You need to prepare a 75g mooncake mold. Next, divide the dough and mung bean filling in the ratio of 30g for the dough and 45g for the filling.

    After rolling out the dough and wrapping the filling, dust the mold with a layer of flour. Then, place the pastry in the mold and press firmly to shape it.

  • Baking the pastry

    Before baking, you need to preheat the oven (Kangaroo 30l oven) for 15 minutes at a temperature of 170 degrees Celsius.

    Once the oven is hot, place the pastry inside and bake at 175 degrees Celsius for 15 minutes.

    After 15 minutes, take the pastry out, spray a little water on it, and wait for it to cool down completely, then mix one egg yolk with 2 tablespoons of water or cooking oil, and brush it on the surface and around the pastry.

    Then, continue baking the pastry for another 10 minutes at 180 degrees Celsius.

    Note: The baking temperature and time depend on the type of dough and oven. You need to adjust accordingly.

  • Final Product

    The cake is evenly baked to a beautiful golden color, the crust is slightly crispy, and it will soften over the next two or three days, developing a richer color from the syrup. The cake is fragrant, with a moderate sweetness.

    You can cut the cake and enjoy it with green tea for a wonderful experience!
