  • Choose bird’s nests that are yellowish white or orange, with no color fading when soaked in water.
  • Prefer to choose nests with thin edges, thick bases, and the fibers attached to each other forming many layers, with the smell of swallow saliva.
  • To buy quality nests, you should purchase directly from swallow breeding farms or stores specializing in bird’s nest products.

How to choose good quality cordyceps

  • Good quality cordyceps will have a fragrance similar to straw mushroom mixed with a slight fishy smell of shiitake mushroom.
  • When buying, you should hold it in your hand and shake lightly. If it feels like dry grass, light but not too fluffy, then that is good quality cordyceps, so you should buy it.
  • To purchase quality cordyceps, you should look for reputable large herbal medicine stores.

How to prepare Bird’s Nest with Cordyceps

  • Prepare the ingredients

    Wash the pandan leaves thoroughly under running water and then tie them into a small bundle.

    Peel the ginger, rinse it briefly with water, and let it dry. Then, slice it into thin pieces.

    Break the bird’s nest into small pieces and place it in a bowl. Take about 2 sticks of cordyceps and put them on a plate.

  • Boil the pandan leaf water

    Put the pandan leaves in a pot with 500ml of water and place it on the stove, and boil the pandan leaf water for 20 minutes. Then, turn off the heat and let it cool.

    Pour the cooled pandan leaf water into the bowl containing the bird’s nest.

    Use a small cloth to dip in some water, wring it out until dry, and then place it at the bottom of the pot. Next, place the bowl of steamed bird’s nest inside and top it with a few slices of ginger, then cover the bowl with a lid.

    Then, pour water into the pot until it is nearly 2/3 the height of the bowl, then turn on the stove and steam the bird’s nest over medium heat.

    After steaming the bird’s nest for 20 minutes, open the lid of the bowl, add 2 tablespoons of rock sugar and 2 cordyceps, then cover the lid again and steam for another 20 minutes before turning off the heat.
