How to cook Red apple chia seed bird’s nest soup

  • Prepare bird’s nest and red apple

    First, soak the bird’s nest in cooled boiled water for 1 hour to soften the nest.

    Wash the red apple clean with water, then soak it in water for 30 minutes to soften the apple.

    Soak the chia seeds in water for 15 – 20 minutes to soften. Clean the pandan leaves, then roll them up and tie them into a bundle.

  • Cook pandan leaf water

    Pour 550ml of filtered water into the pot, drop in the prepared pot of pandan leaves. Place it on the stove and simmer for 30 minutes over low heat.

    After 30 minutes, add another 100ml of water to the pot, then add the red dates and cook for another 10 minutes over low heat. After 10 minutes of cooking, turn off the heat.

  • Steam bird’s nest

    After soaking the bird’s nest until soft, use a fork to tear it into small pieces. Once torn, pass the bird’s nest through a sieve to remove the soaking water.

    Line the pot with a cloth, place the bowl of bird’s nest on the cloth. Add the cooked red dates along with the pandan leaf water into the bowl. Cover the bowl and pour in water until it reaches 1/3 of the steamer pot, making sure it doesn’t submerge the bird’s nest bowl by more than 1/2.

    Then place it on the stove and steam on low heat for 20 minutes. After 20 minutes, open the lid and add sugar to the bowl of steamed bird’s nest, adjusting the amount of sugar according to your taste.

    After adding the sugar, cover the lid and keep the bowl warm to allow the sugar to dissolve completely. After about 5 – 7 minutes, remove the bowl and add the soaked chia seeds.

    Thus, you have completed the dish of bird’s nest with red date and chia seeds.

  • Moreover, to ensure quality, you should buy goji berries from reputable, long-established places.
  • Additionally, avoid buying goji berries that are small in size, have black spots, have little flesh, and large seeds because these fruits tend to be bitter and not tasty.

  • Prepare the ingredients

    The bird’s nest you buy should be pre-processed and cleaned of feathers, then soak it in clean water for about 30 minutes to 1 hour to let it expand and soften.

    Red apples and goji berries should also be rinsed with water to clean and then soaked in water for about 30 minutes to expand.

    Next, use scissors to cut the red apples in half for easy eating. After the goji berries have softened, remove them and drain.

    For fresh ginger, wash it briefly, peel it with a knife, and then slice it thinly.

  • Steamed Bird’s Nest

    You pour water until it covers about 1/2 of the steaming pot and then place the clay pot inside. Pour filtered or boiled water that has cooled down into the clay pot until it covers about 1/4 of the pot.

    Next, add the bird’s nest, red dates, and softened goji berries into the pot, and steam on low heat for 15 – 20 minutes to ensure the nest is cooked evenly.

    After 15 – 20 minutes, open the pot lid and add 2 tablespoons of rock sugar, stirring well to dissolve.

    Add 10g of snow fungus and continue steaming for another 5 minutes until all the ingredients are soft. After 5 minutes, add 2 tablespoons of chia seeds, turn off the heat, cover the pot, and let it rest for 10 minutes.

    After 10 minutes, take the clay pot out, scoop the steamed bird’s nest with red dates and chia seeds into bowls, and enjoy!

    Tip:

    • The bird’s nest retains its nutrients when steamed at 80 degrees Celsius, so do not keep the heat too high when steaming the nest!
    • If you have a slow cooker at home, you can simply place the bird’s nest pot in the slow cooker for steaming. This will help you easily adjust the temperature, making it more convenient than steaming with a regular pot.
