How to Choose Fresh and Delicious Chicken Breast
- To choose good chicken breast, select pieces with white skin as this indicates it’s matured chicken which has firmer and tastier meat. When pressing the meat, it should be resilient, not soft or mushy.
- Avoid selecting pieces with many white stripes; the more stripes there are, the lower the amount of fat and protein, making it harder for the meat to absorb flavors during cooking.
How to Cook Pan-Seared Chicken Breast with Lemon Sauce

Prepare and Marinate the Chicken Breast
Remove the skin from the chicken breast you bought, rinse it with water, then rub salt evenly over the breast, and rinse again with clean water to eliminate the fishy smell. Let it drain or use a clean towel to pat it dry.
Marinate the chicken with 1/3 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, and 1/4 teaspoon of pepper.
Make sure the chicken absorbs the seasoning evenly on both sides. Gently pat the meat to help the seasoning penetrate. Then let the chicken marinate for 20 minutes to absorb the flavors.
Tips for Preparing Chicken Breast to Eliminate Odor:
- After rubbing with salt, you can use a mixture of alcohol and sliced ginger, crushed to rub and massage the entire chicken breast once again to help eliminate odors and impurities. Rinse thoroughly and let it drain.
- Alternatively, you can add lemon to water and soak the chicken breast for 15 – 20 minutes. After that, take it out, rinse it with cold water, and let it drain.

Pan-Seal the Chicken Breast
Place a pan on the stove, turn on medium-low heat, add 1/2 tablespoon of cooking oil, and when the oil is hot, add the chicken to pan-sear. After a while, add crushed lemongrass, 20g of garlic, and 1 peeled shallot to the pan.
Pan-sear and turn the chicken frequently until both sides are golden brown as shown in the picture, then turn off the heat.

Preparation of Vegetables
Tomatoes and onions are cleaned, drained, then diced as shown.
Ginger and remaining shallots are also peeled and sliced.
Remove the seeds from the chili and chop it finely.

Making the Sauce
Place a pan on the stove, add 1/2 tablespoon of cooking oil, then add the prepared tomatoes, shallots, and ginger to the pan and stir-fry over medium heat.
Once the tomatoes are slightly cooked, add the onions and stir well. Season with 1 tablespoon of oyster sauce, 1/2 teaspoon of seasoning powder, and 1/2 teaspoon of monosodium glutamate, continuing to stir to absorb the flavors.
Then add about 100ml of water, stir well and bring to a boil, add the juice of 1/2 lemon and 1 tablespoon of honey. Stir well.

Once the sauce thickens, add the grilled chicken and cook for an additional 5 minutes to let the chicken absorb the sauce.
