How to choose good pork belly
- You should choose pork that is bright pink, with no strange smell, and white transparent fat; avoid pork that is pale and has a foul smell.
- You can press the meat with your hand; if it springs back immediately, leaving no indent, and feels dry and not sticky, it indicates quality meat.
- Good pork should have even fibers, be firm, and show no signs of leaking fluid or being slimy.
- When buying meat, you should ask the seller to cut it along the grain, and avoid meat with small white lumps interspersed among the fibers, as this may indicate the meat has been infected with cysts, which can negatively affect your health when consumed.
How to prepare Stir-fried Coconut Heart with Pork Belly

Prepare the pork
The meat you buy should be soaked in salt water, and use your hands to rub the entire piece of meat to remove all blood and dirt, helping to reduce the unpleasant smell of the meat.
Wash it again with clean water, and let it drain. Then cut the meat into bite-sized pieces.
Marinate the pork with 1 teaspoon of seasoning, 1/2 teaspoon of pepper, and 1 teaspoon of minced shallot for 5 – 10 minutes.
How to prepare meat to avoid smell:When you buy pork, you need to scrape off the hair on the skin, or you can ask the seller to scrape it off to save time.
Soak the pork in diluted salt water for about 15 minutes. After soaking, rinse it thoroughly with cold water about 3 – 4 times.

Coconut heart should be cut into long rectangular pieces, then soak it in water mixed with a little vinegar to prevent discoloration.
Wash the carrot and cut it into rectangular pieces. The onion should be cut into wedges. Cilantro and basil leaves should be chopped finely.

Mix 1 teaspoon of seasoning, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of sugar, 1/2 teaspoon of pepper, 3 tablespoons of water, and 1/2 tablespoon of rice vinegar, then mix well to make the sauce.

Sauté coconut heart with pork belly
Heat a pan with about 2 tablespoons of cooking oil, add the pork belly and sear until the meat is slightly charred, then add 1 teaspoon of minced garlic, followed by the coconut heart, carrots, and 2/3 of the sauce.
When the coconut heart and carrots are cooked, add sliced chili, onion, and the remaining sauce. Before turning off the heat, add 1 teaspoon of fish sauce, basil, and cilantro to complete the dish.
You should sear the meat before adding the minced garlic to prevent the garlic from burning! -
