  • Fresh red dragon fruit will have a large, round shape, a shiny skin, and a deep, even pink color.
  • You should choose red dragon fruits with green, bright stems and ears, and when gently bent with your hand, they should have a certain elasticity because these fruits are still fresh and newly harvested, so they won’t be overripe.
  • Avoid choosing fruits that have bruised skin, are soft when pressed lightly, lack elasticity, or have dry stems because these fruits are usually older and not fresh anymore.

What is yeast? Where to buy it?

  • Yeast is a type of dry, fine-grained, brown powder. In terms of properties: yeast needs to be activated first with warm water at 32 – 38 degrees Celsius before it can be used.
  • You can buy this type of yeast at stores selling baking ingredients, large supermarkets, or on e-commerce websites.

How to make Dragon Fruit Pizza Base

  • Mixing the dough

    You peel 1/2 of the dragon fruit, put the dragon fruit flesh into the bowl and use your hands to mash it until it releases juice.

    Next, sift 300g of flour into the bowl with the dragon fruit along with 5g of yeast, 1 teaspoon of sugar, and 1 teaspoon of salt, then mix well. Then add 2 teaspoons of olive oil and a little water to the flour mixture, stirring in a circular motion.

    Tip: To prevent the dough from being too wet or too dry, add water gradually while kneading. If the dough is too dry, add more water; if it is too wet, add more flour.

  • Knead the dough

    After mixing the dough, sprinkle a little dry flour on the tray or cutting board, then take the dough out and knead it thoroughly until it forms a smooth, elastic mass. When pressed, it should feel slightly sticky and elastic.

    Once the dough is kneaded into a smooth mass, rub a little olive oil over the dough and place it in a bowl or basin.

    Then cover the dough tightly with plastic wrap or a towel and let it rest for about 1 hour.

    After the dough has risen, sprinkle a thin layer of dry flour on the tray or cutting board, place the dough on it, and divide it into several equal parts. Next, sprinkle a little more flour on top and proceed to roll the dough thinly to about 2 – 3mm and let it rest for another 15 – 20 minutes.

    After rolling the dough thin, use a fork to poke holes in the surface to allow steam to escape, making the pizza tastier when baked.

  • Baking the Pizza

    After completing the crust, preheat the air fryer at 150 degrees Celsius for about 5 minutes, then place the crust in to bake at 200 degrees Celsius for about 10 minutes.
