- You should choose pig ears that are bright white, without any bruises or purple spots due to blood clots or undissolved drug marks, and avoid selecting ears that have cuts, chips, scratches, or are not intact.
- You can try holding the pig ear; if the ear feels firm, not soft or mushy, and has no slime, it is still fresh.
- Fresh meat typically has good elasticity, so when you lightly press on the pig ear with your hand and feel it spring back, it’s good.
- Additionally, freshly slaughtered pig ears usually do not have any unpleasant odor or strange smells.
How to choose good pig tongues
- You should choose thick pig tongues that are slightly round, have a bright color, and the area near the throat should be white underneath.
- Avoid choosing pig tongues that are dark black, have uneven colors, or have bruises or discoloration due to hemorrhage.
- If you touch it and feel slimy, have an unpleasant or strong smell, then you should not buy it.

Prepare the Pork Ears
When you buy pork ears, you should use a knife or a razor blade to scrape them clean, avoiding any remaining hair or dirt on the skin. Then, rub salt all over the pork ears and wash them with water until clean.
Tips for cleaning pork ears thoroughly and without odor:
- Use vinegar or lemon, salt: You need to use a mixture of vinegar and salt, or substitute vinegar with lemon juice, and rub it all over the pork ears evenly. Then soak the pork ears in a bowl of lemon juice or diluted vinegar for about 10 minutes, then take them out to drain.
- Use flour or tapioca starch: Coat the pork ears with flour, then rub evenly until it foams, and scrape off the foam. Continue to rub with the flour a few more times until the pork ears are clean and odor-free, then rinse with water, drain, and wait for further processing.
- Use alum: Soak the pork ears in an alum solution for about 5 – 10 minutes, then take them out and scrape them clean. Then soak them in diluted salt water, scrape again, and rinse with clean water.
- Use salt and starfruit juice: Squeeze starfruit juice over the pork ears, rub evenly, then scrape off the dirt on the outside of the pork ears. Rub with a little salt and rinse with water, ensuring the pork ears are completely clean.
- Use rice washing water or pickled vegetables: Just soak the pork ears in a mixture of rice washing water or pickled vegetables for about 5 – 10 minutes, then take them out and scrape them clean with a knife. After that, use lemon to rub all over the pork ears, then scrape again to finish!

Preparing the pig’s tongue
After purchasing the pig’s tongue, use salt to rub it thoroughly all over the tongue, then blanch it in boiling water for about 5 minutes and start scraping off the white membrane on the tongue, making sure to scrape the root of the tongue clean as well!
Then use a mixture of lemon and salt to rub it again, and rinse with clean water.

- Lemongrass and salt: Boil water with smashed lemongrass and a little salt, then quickly immerse the pig’s tongue and scrape it clean. Lemongrass effectively eliminates odors.

Pre-cook the ingredients
Put a pot of water on the stove and gradually add ingredients such as ginger, salt, lemongrass, and vinegar to boil. When the water boils, drop in the cleaned pig’s ears and tongue to pre-cook for about 30 minutes.
