How to choose fresh ingredients
How to choose fresh eggs
- Egg color: Industrial chicken eggs have dark brown shells, uniformly colored, without cracks and black spots. For free-range eggs, you should not rely on color to choose because the shell color varies by type.
- Touch test: Fresh eggs feel slightly rough and textured when held. Older eggs are smoother and shinier.
- Shake the egg: Hold the egg close to your ear and shake it gently; the longer the egg has been stored, the more movement you will feel.
- Shine a light on the egg: When illuminated under a lamp or sunlight, a fresh egg will have a small air cell, the yolk is centered and pink or orange, and the white is clear. In contrast, an old egg has a large air cell, a dark red yolk, and visible veins.
How to choose good cabbage
- You should choose cabbages that are round and even in shape. Good cabbages are those that are not too large in size and have a moderate weight, not too heavy or too light. Avoid buying cabbages that are flat or oval-shaped. These are cabbages that are spongy and not firm.
- You should also buy cabbages that have a slightly dark green color. Do not buy cabbages that are light white as they may be old cabbages, tough with a lot of fibers, and not tasty.
- Avoid buying cabbages with bruised outer leaves or those that have turned yellow.
How to choose good potatoes
- You should choose potatoes that feel firm in hand, are slightly heavy, intact, with a smooth skin surface, not bruised.
- Yellow potatoes will taste better and sweeter than those that are slightly white.
- Avoid buying potatoes with wrinkled skin, that feel soft when pressed, as most of these are old, wilted, and bland in taste.
- Absolutely do not choose potatoes with green skin or those that have sprouted as they are extremely dangerous to health.
