- You should choose beans with green stems that look fresh.
- Good green beans are usually long and slender, flat without bulges. When gently pressed, they should feel crisp and firm.
- Avoid beans that show signs of being soft, bruised, or have dark spots. You should also avoid beans that are very dark green, have few hairs, are large, and shiny; as these may be beans that have been sprayed with too many pesticides and growth hormones, which are not good for health.

How to prepare Chicken Heart Stir-fried with Green Beans (String Beans)

Prepare the ingredients
To clean and eliminate the odor of chicken hearts, soak the hearts in a diluted saltwater solution mixed with 1 tablespoon of white wine for about 15 minutes, then rinse thoroughly with water. After that, cut them in half.
Remove the stems from the straw mushrooms and slice them thinly, about 1/3 the thickness of a finger.
Trim the ends of the green beans, peel the strings from both sides, and cut them into sections about 2 fingers long or halved. Then blanch briefly in boiling water for about 1 minute (counting from when the water boils).
Peel and finely chop the garlic. Trim the roots from the green onions, discard any wilted or bruised leaves, wash thoroughly, and cut into sections about 2 fingers long.
Peel and slice the onion thinly.

Marinate the chicken hearts
Place the chicken hearts in a bowl and marinate with 1 minced garlic clove, 1 tablespoon of soy sauce, 1/2 tablespoon of seasoning powder, and 1/3 tablespoon of sugar. Marinate for about 15 minutes to absorb the flavors.

Stir-fried chicken hearts with green beans
Place a pan on the stove, add 1 tablespoon of cooking oil, heat it up, and then add the marinated chicken hearts to stir-fry for about 10 minutes over medium heat until the chicken hearts are cooked, then transfer them to a separate bowl.
Add 2 tablespoons of cooking oil to the pan where you stir-fried the chicken hearts, heat it up, and then add the remaining garlic to sauté until fragrant and golden. After that, add the onion, mushrooms, green beans, 1/2 tablespoon of monosodium glutamate, and 1 tablespoon of oyster sauce, and stir-fry for about 5 minutes over medium heat.
Finally, add the chicken hearts back into the pan and stir-fry for an additional 3 minutes with chopped green onions, seasoning to taste, and sprinkle some ground pepper to finish.
