Ingredients for Red Bean Cake For 4 people

Cake flour 2 teaspoons (or roasted sticky rice flour) Baking soda 1/3 teaspoon (baking powder) Red beans 200 gr Sugar 100 gr Sticky rice 200 gr Ginger 3 gr Salt 1/3 teaspoon Water 600 ml

How to choose red beans

  • Choose bright red beans, without pests and no signs of mold or unpleasant odors.
  • Choose beans of moderate size so that after cooking, they become soft and have a delicious taste.
  • Avoid choosing very large beans, as these often do not taste good, have fewer nutrients than smaller beans, and can especially impart a slight bitterness when eaten.

How to make Red Bean Cake

  • Boil the red beans

    Soak the red beans overnight until soft, then wash them clean.

    Place a pot on the stove, add the soaked red beans, and enough water to cover the beans. Cover tightly and bring the mixture to a boil over high heat.

    When the mixture boils, skim off any dirt and foam, reduce the heat to medium, add a little salt, and continue to cook for about 30 minutes.

    After 30 minutes, add 1/3 teaspoon of baking soda and continue to cook until the beans are very soft.

    When the beans are cooked, turn off the heat and let them cool slightly.

    Tip: Adding baking soda helps the beans cook faster. However, if you don’t have it, you can skip this step.

  • Marinate red beans with sugar

    Strain the bean mixture through a sieve to collect the solids, then marinate with 100g of sugar for about 15 minutes.

  • Cooking sticky rice with red beans

    Soak the glutinous rice for 6 – 8 hours, then rinse thoroughly and place it in the pot.

    Next, add the red bean water cooked in Step 1, cover the pot, and cook on high heat.

    When the water in the pot boils, reduce the heat to medium-low and continue cooking until the rice is done.

    Tip: You should monitor the amount of red bean water added to the rice to ensure the rice cooks to be sticky and delicious. Avoid adding too little water, which will make the rice dry, or too much water, which will make it mushy.

  • Pressing red bean cake

    First, place the red beans marinated with sugar into a pan and stir over medium heat until the mixture boils.

    Next, add 3g of julienned ginger and continue to stir until the syrup reduces.

    Then, add the cooked sticky rice, lower the heat to the minimum, and stir until the pan and the filling mixture are dry.

    Sift 1 teaspoon of in cake flour into a mold, using a spoon to evenly spread the flour across the bottom of the mold.

    Next, evenly spread the red bean mixture on top and use a spoon to press it down firmly so it becomes flat.

    Finally, sift 1 teaspoon of in cake flour on top to finish.
