How to Choose Fresh Ingredients
How to choose fresh pork belly
- To buy good pork belly, you should choose pieces that have a balanced ratio of fat and meat, with light red or bright pink meat, and a layer of fat that is bright white.
- Good quality pork belly has a firm texture, good elasticity, a dry and slightly shiny outer layer, and the meat and fat stick tightly together.
- Avoid buying pork belly pieces that are too loose, pale in color, feel slimy to the touch, have dark fat, are crumbly, and have a fishy smell as they may be old and not fresh.
How to choose fresh and delicious raw vegetables
- Choose raw vegetables that have natural colors, are fresh green, intact, not wilted or bruised.
- Avoid selecting vegetables that are too dark green, overly lush, or unusually large in size as they are likely to have been treated with growth hormones.
How to make Boiled Meat Rice Paper Rolls
-
Prepare the ingredients
After purchasing the pork belly, wash it clean with water and then rub it with a little salt or lemon juice to remove the odor, then rinse again with clean water and let it drain.
Peel the carrot, wash it clean, and then cut it into sticks about 2 finger lengths long.
Pick the raw vegetables like basil, lettuce, etc., clean them, and wash them. For green onions, remove the wilted leaves, cut off the roots, then cut the green parts and crush them lightly.
-
Boil pork and carrots
Boil about 500ml of water, when the water is boiling, add the carrots and blanch for about 2 minutes, then remove them and soak them in a bowl of cold water to keep the carrots crunchy and sweet.
Next, add the pork to the pot of water where the carrots were blanched, add smashed green onions and a little ground pepper. To enhance the flavor of the meat, season with 1 spoon of sugar, 1 teaspoon of seasoning powder, 1 teaspoon of salt, and 1/2 teaspoon of monosodium glutamate.
Boil the meat on low heat for 20 minutes until the meat is soft, then turn off the heat. Keep the broth to make the sauce. After the meat is cooked, remove it and soak it in a bowl of cold water for about 5 minutes to cool, then cut it into bite-sized pieces.
-
Make the dipping sauce
Bring the remaining broth from boiling the meat to a boil in a pot for about 5 minutes until it thickens, add 1 teaspoon of sugar, 2 teaspoons of fish sauce.
Next, add 1 teaspoon of dried chili or chili powder, taste and adjust seasoning as needed, then turn off the heat and add a little chopped green onion for a more aromatic dipping sauce.

Make pork rice paper rolls
If you are using water-dipped rice paper, you need to spread a little warm water on it first, wait about 30 seconds for the rice paper to soften.
Then, add some vermicelli, lettuce, basil,… along with a bit of boiled meat; the amount of filling can be adjusted to your preference. Gently roll the rice paper, dip it generously into the dipping sauce, and enjoy.
