How to choose fresh and delicious chicken eggs
- Choose eggs with thick shells, not too large, as they are usually fresher than thin-shelled, large eggs.
- If you notice that the eggshell is too smooth and shiny, those eggs have been stored for a long time, which may negatively affect health when consumed.
- For eggs with hard outer shells, check if there is a thin layer of powder surrounding the shell; if so, they are fresh eggs.
- To check if the eggs are still fresh, gently shake them; if there is no movement, the eggs are fresh; if there is strong movement, the eggs are old.
- Currently, there are fake chicken eggs, bleached chicken eggs, and Chinese chicken eggs in the market, so buy eggs from reputable markets, stores, or supermarkets to ensure egg quality!
How to prepare Taiwanese-style egg rice paper rolls

Make the sauce
Cut the purchased sausages in half lengthwise. Crack the eggs into a bowl, then add a little salt and pepper, and beat the eggs to mix them into the mixture.

Beating eggs and frying sausages
Place a pan on the stove, then add 1 teaspoon of cooking oil, then pour a thin layer of beaten eggs into the pan. When the eggs start to set, place a rice paper on top.
Next, gently flip the rice paper down onto the pan. Add sausage on the eggs and slowly roll everything up.
Finally, turn the rice paper to fry both sides until golden and crispy!
Note:- At this step, when you see the top of the eggs not yet cooked and still a bit runny, quickly add the rice paper in! If the eggs are fully cooked, they won’t stick well to the rice paper.
- To ensure the eggs when fried are the same size as the rice paper, you should choose a non-stick pan that is appropriately sized for the type of rice paper you bought!

Prepare the dipping sauce
Add 2 teaspoons of soy sauce, 1/2 teaspoon of sugar, 1/2 teaspoon of chili sauce, and 1 teaspoon of toasted sesame into a bowl, then stir the mixture well.
