- Choose spinach with bright green stems, red roots, and no broken parts.
- The leaves should be dark green but not too dark, indicating that they are still young and contain many nutrients.
- Avoid choosing wilted, yellowing, or rotten spinach as it will not taste good and will lose its nutrients.
How to choose good quality garlic
- Choose garlic with a smooth outer skin, intact, with few or no grooves because garlic with many grooves will have very small cloves, causing a waste of time in the preparation process.
- Select garlic bulbs of moderate size, firm to the touch, and feel dry.
- If you peel a bit of the outer skin and see that the garlic is yellowish or greenish, you should not buy it as they may be spoiled or have been stored too long, resulting in poor taste.
- Avoid buying garlic bulbs that are brown, soft, leaking, sprouted, or have a musty smell.

Prepare the ingredients
Cut off the old stems of the spinach, remove any damaged leaves, then place them in a bowl and rinse once with water.
Next, soak the spinach in clean water with 1/2 tablespoon of baking soda for 10 minutes, then rinse thoroughly with water 2 – 3 times and let it drain.
Peel the garlic, rinse it clean, let it drain, and then crush it.
Tip: To better remove impurities from vegetables, fruits, and tubers, you should use baking soda when soaking instead of regular salt. -
Blanch the spinach
Put a pot of water on the stove and boil it over high heat. When the water boils, add 1 teaspoon of salt, stir well, then add the spinach to blanch for about 2 minutes before turning off the heat.
After blanching, put the spinach into a bowl of ice cold water for about 30 seconds, then remove and let it drain.
Tip:- During the blanching process, absolutely do not cover the pot as it will cause the vegetables to steam, making them strong, mushy, and yellow.
- To keep the vegetables looking bright green and crispy, you should soak them in cold water immediately after blanching.

Stir-fry spinach with garlic
Place a pan on the stove with 3 tablespoons of cooking oil and heat it on high. When the oil is hot, add garlic and sauté until fragrant for about 30 seconds until the garlic turns golden.
Next, add the blanched spinach to the pan, stirring for about 30 seconds.
Season with 1/2 tablespoon of monosodium glutamate, 1/2 tablespoon of seasoning powder, and 1/2 tablespoon of salt, then continue to stir-fry on high heat for about 3 minutes.
Adjust the seasoning to taste, then sprinkle in a little pepper and turn off the heat. Finally, you just need to plate the stir-fried vegetables on a plate to enjoy.
Tip: To make the dish look more appealing and enhance the flavor of the garlic, when stir-frying vegetables with garlic, you should only crush the garlic instead of finely chopping it. -
