Prepare the ingredients
Wash the pork belly with diluted salt water, then rinse with clean water, drain, and cut into bite-sized cubes.
Peel the shallots and garlic, then mince them. Remove the roots from the green onions, wash them clean, and chop them finely. Rinse the sour salted gourd with water to reduce the saltiness.
Marinate the cut pork belly with 1 teaspoon of oyster sauce, 2 teaspoons of coconut sugar, 2 teaspoons of fish sauce, 1 teaspoon of seasoning powder, and 1 teaspoon of MSG, then mix well for the meat to absorb the seasonings.
How to clean pork belly without a smell:
- To clean and remove dirt from the pork belly, besides using diluted salt water to wash, you can also use coarse salt or rub lime on the meat and then rinse with clean water, allowing it to drain.
- Another way to help clean the meat and remove dirt is to use crushed ginger mixed with rice wine to wash the meat.

Braised pork with pickled gourd
Heat a pan on the stove, add 2 teaspoons of cooking oil into the pan. Wait for the oil to heat up, then add minced onion and garlic to sauté until fragrant.
Next, add the pork belly to the pan, stir-frying over medium heat for about 3 minutes until the pork is slightly golden, then add all the sour pickled gourd and stir-fry for about 5 minutes.
After 5 minutes, add about 30ml of water to the pan, continue to braise for about 10 minutes for the pork belly and gourd to cook through and absorb the seasonings evenly.
