Ingredients for Beef Tendon Salad with Young Green Mango and Salted Kumquat For 3 people

  • Prepare and simmer beef tendon

    After purchasing the beef tendon, soak it in diluted saltwater for about 3 – 5 minutes. Then, rinse the beef tendon with water several times and let it drain.

    • Method 1: First, you can soak the beef tendon in lemon juice or diluted vinegar for 3 – 5 minutes. After that, rinse the beef tendon thoroughly, and it will be ready for cooking!
    • Method 2: Additionally, you can roast or crush a piece of ginger and rub it all over the beef tendon to eliminate the smell.

    Place a pot on the stove, add 1 liter of water along with 500g of beef tendon, 100g of green onions, and a sliced piece of ginger.

    Then, simmer for 30 minutes until the beef tendon is tender enough.

    Once the beef tendon is cooked, remove it and place it in a bowl of ice water for 20 minutes. Finally, take it out and cut it into small, bite-sized pieces.
