  • If you are buying pre-prepared chicken, you should choose chicken parts that have a characteristic golden skin color, feel smooth to the touch, and have good elasticity.
  • Good chicken will have naturally pinkish-red meat inside, without clots or unusual bruises. If buying packaged chicken, you should pay attention to the expiration date and check if the packaging is intact.

  • To make the papaya salad tasty, you should choose large fruits that are still green and feel firm when touched.
  • When selecting papaya for salad, you should choose fruits that feel heavy in your hand, with stems still sticky, as these papayas have fewer seeds, with thick and abundant flesh.
  • If you buy papaya to make salad, you should choose freshly picked duck-billed papayas because the flesh will be crunchy, not soft, making the dish more delicious.
  • Avoid buying papayas if it has rained a few days prior, as the papayas will lose their flavor, affecting the quality of the dish.

  • Prepare the chicken

    After purchasing the chicken, you prepare it by rubbing salt all over the skin and inside the chicken’s cavity, then wash it clean with water and let it drain.

    Ways to prepare chicken without odor:
    • Method 1: Use a mixture of vinegar and salt in a 1:1 ratio, apply it evenly to the chicken or soak the meat in the mixture for about 3 – 5 minutes, then rinse with clean water.
    • Method 2: Use a mixture of lemon juice and salt in a 1:1 ratio, apply it to the chicken or soak it for 3 – 5 minutes, then rinse with water.

    The green papaya you bought should be washed clean, peeled, and then shredded. With 9 red onions, first peel them, slice 6 onions thinly, and leave 3 whole.

    Roast peanuts should be shelled and crushed. Wash the Vietnamese coriander, drain it, and then chop it finely.

    Place a pan on the stove, add 1 tablespoon of cooking oil, let the pan heat for about 2 – 3 minutes, then add the sliced onions and stir-fry until the onions are golden and fragrant, then turn off the heat.

  • Boil and shred the chicken

    Put the chicken in a pot, pour in enough water to cover the chicken, add 1 spoon of salt and 3 shallots. Start boiling the chicken when the water is still cold over high heat for about 10 minutes.

    When the pot of boiling water is hot, lower the heat to a simmer, allowing the chicken to cook slowly for about another 15 minutes before turning off the heat.

    Rinse the chicken under running water to clean it and soak the chicken in ice-cold water to make the skin crispy and the meat white. Then, remove the bones and shred the chicken into small pieces.

  • Mix the salad dressing

    Mix 4 tablespoons of fish sauce, 2 tablespoons of sugar, 1 teaspoon of minced garlic, 1 teaspoon of minced chili, and the juice of 1/2 lemon, then stir gently to dissolve the mixture completely.
