How to choose fresh chicken
- If you are buying live chicken, you should choose those that move actively, have smooth feathers and a shiny appearance. Do not choose chickens that look droopy, with tails down and ruffled feathers, bruises on the legs, or pale combs.
- If you are buying pre-prepared chicken, you should choose chicken parts that have a characteristic golden skin color, feel smooth to the touch, and have good elasticity.
- Good chicken will have naturally pinkish-red meat inside, without clots or unusual bruises. If buying packaged chicken, you should pay attention to the expiration date and check if the packaging is intact.

Prepare the chicken
After purchasing the chicken, you prepare it by rubbing salt all over the skin and inside the chicken’s cavity, then wash it clean with water and let it drain.

Prepare other ingredients
The green papaya you bought should be washed clean, peeled, and then shredded. With 9 red onions, first peel them, slice 6 onions thinly, and leave 3 whole.
Roast peanuts should be shelled and crushed. Wash the Vietnamese coriander, drain it, and then chop it finely.
Place a pan on the stove, add 1 tablespoon of cooking oil, let the pan heat for about 2 – 3 minutes, then add the sliced onions and stir-fry until the onions are golden and fragrant, then turn off the heat.
