  • Fresh salmon usually has a light orange color, the skin should appear shiny, smooth, and not too rough.
  • Pressing with your hand should show that the salmon is firm and has clear elasticity, not too soft and does not have unusual sliminess on the surface.
  • You should avoid buying salmon that has mushy flesh, especially if it emits an unusual fishy smell as that indicates the salmon has spoiled due to being kept too long.

  • Fresh and delicious bok choy are those with bright green color, and when observing the leaves, they should be smooth and shiny, without excessive browning or wilting.
  • In addition, the stalks of the bok choy should have a light green color and not be rotten. When held, they should feel noticeably heavy, and especially the weight and size of the bok choy should be consistent with each other, without significant differences.
  • You should limit buying bok choy that has been excessively eaten by insects, and that also emits a strong foul odor, as this may be a sign that the bok choy has been sprayed with too many chemicals for growth.

  • Prepare the ingredients

    First, with 200gr of salmon purchased, soak it in the juice of 1 diluted lemon and 1 teaspoon of salt for about 1 – 2 minutes, then rinse it with clean water, drain, and use a knife to cut it into bite-sized pieces.

    For the bok choy, remove the stem and discard any wilted or damaged parts, then rinse it directly under running water until clean, and let it drain.

    Peel the ginger, wash it clean, drain it, then chop it finely along with the shallots and garlic.

    • Method 1: The simplest method is to soak the salmon in fresh milk for about 10 minutes.
    • Method 2: You can also soak the salmon in a mixture of white wine, smashed ginger or finely chopped ginger for 7 – 10 minutes.
    • Method 3: Additionally, you can soak the salmon in diluted lemon juice with a little salt for 30 – 60 seconds.

    Then, place all the marinated salmon into a bowl along with 1 chicken egg, and use chopsticks to mix well.

  • Fry the fish

    Once the ingredients are ready, heat another pan on the stove with 2 tablespoons of olive oil over medium heat. When the oil is hot, add 200g of the sesame-coated salmon and sear for about 3 – 5 minutes.

    When the salmon is just cooked, turn off the heat and quickly transfer the salmon to a plate to drain the oil.

    After frying the salmon, place a new pan on the stove with 2 tablespoons of olive oil and the remaining minced garlic to sauté until fragrant over medium heat.

    Next, add 75ml of water and 1 tablespoon of oyster sauce, using a spoon to mix well for about 2 – 3 minutes.

    Once the sauce boils, season it to taste. Finally, add another 1 tablespoon of starch, continuing to stir constantly for 2 minutes, until the sauce thickens, then turn off the heat.
