How to choose good red tilapia
- For the dish to be delicious, you need to choose fresh red tilapia, with clear eyes, a slippery feel when held, pink gills, firm scales, and if it sinks in water, the fish is still fresh.
- If the slime layer on the fish turns sticky, the eyes are sunken and cloudy, the scales easily come off, the gills are white or dark, the flesh is soft and not elastic, floating on the water’s surface. Those are signs of spoiled fish, and you should not buy it.
Information about pickled scallions
You can buy pickled scallions at supermarkets, grocery stores, or you can make them at home using the following method:
- First, buy some scallions, soak them in salt water and alum overnight to reduce their pungency. Then, rinse the scallions several times in water, trim the roots, tops, and the outer skin, and place them on a tray or in a basket to drain well.
- After preparing the scallions, put them in a bowl, add sugar, and mix well. Next, spread the scallions on a tray and let them dry in the shade for about 3 – 4 hours until they become firmer.
- Next, put vinegar and sugar in a pot, bring to a boil, and then let it cool. After that, pack the scallions into a glass jar, pour the vinegar-sugar mixture over them, and let them soak for about 2-3 days before they can be used.

Prepare the ingredients
Fry the bacon for about 10 minutes until cooked and fragrant, then take it out and cut it into small pieces.
Peel and julienne the ginger. For the pickled scallions, cut half into strips and chop the remaining half finely.
Fillet the red tilapia and use a knife to slice thinly to the end of the meat, then stop, and cut one more thin slice, this time cutting all the way through the meat.
Spread it out to get one large slice of meat, use a knife to trim the edges for a better appearance. Chop up any excess meat.
