How to choose fresh and delicious crab
- You should choose large crabs with firm meat. Especially those crabs that are still carrying eggs, as they tend to be more fragrant and richer in taste.
- You can try breaking the crab’s claw; if the meat is full, then it’s a good one, but if it’s hollow, then it usually has less meat.
- The best time to get crabs is during the rainy season (around the 8th to the 10th lunar month), so make sure to buy crabs on these days for better cooking results.
How to make Spicy Salted Crab

Prepare the crab
After buying the crabs, wash them several times with water until clean. Then remove the shell, rinse again, and let them drain.

Fry the sea crab
Place a pan on the stove, add about 100ml of cooking oil to the pan. Heat the oil over medium heat.
When the oil starts to heat up, add all the sea crabs to the pan, stir continuously until the sea crabs turn red and are crispy on both sides, then turn off the heat.
Remove the sea crabs and place them in a strainer lined with paper towels.

Pound the salt and chili
In a bowl, add 3 bird’s eye chilies, 1 tablespoon of salt, 1/2 teaspoon of monosodium glutamate, and 1/2 teaspoon of seasoning powder. Use a pestle to pound the ingredients together until finely mixed.

Making Salt and Chili Fried Crab
Place a pan on the stove, add about 3 tablespoons of cooking oil into the pan (utilizing the oil left from frying the crab). Then, add about 1 tablespoon of minced shallots, sautéing until fragrant over medium heat.
Next, add the crab and fry it again, stirring for about 3 – 5 minutes for the crab to absorb the shallots, making the dish more aromatic.
Finally, add 1/2 of the salt and chili mixture to the pan, mix well for the crab to evenly absorb the salt and chili, then turn off the heat.
Note: You can adjust the amount of salt and chili added to the pan to suit your taste.
