How to choose fresh and delicious pork belly

  • Choose meat that is light red or bright pink; when cut, observe that the meat has a pinkish-white color, is slightly shiny, and the layers of fat in between are bright white.
  • Good, clean pork belly usually has the meat and fat tightly attached to each other, not too loose when held in hand. The outer layer of skin and fat is about 1.5 – 2cm thick.
  • Do not buy meat that smells fishy or spoiled because it has been stored for too long or has been chemically injected.

How to prepare Salted Pork Belly

  • Prepare the ingredients

    Wash the pork belly with water. To reduce the odor, use about 1 teaspoon of coarse salt to rub evenly around the surface of the meat, then rinse with water 2 – 3 more times until clean. Next, let the meat dry, then cut it into bite-sized pieces.

    • Method 1: Use coarse salt dissolved in water, soak the cleaned pork belly for 25 – 30 minutes. Afterwards, take the meat out and rinse it under running water.
    • Method 2: Using crushed ginger to rub around the surface of the meat also effectively removes the odor of pork belly.

    Add pepper and half of the chili to a mortar and pound it.

    After the meat has firmed up, add minced garlic, chili, and cilantro to the pan and stir-fry together for 2-3 minutes. Next, add the remaining teaspoon of salt, pepper, and the pounded chili, and fry for another 3 minutes, then turn off the heat, adjust the seasoning to taste, and serve on a plate.
