How to choose fresh, firm pork belly
- To buy good pork belly, you should choose a piece that has a balanced amount of lean meat and fat, with a thick outer skin.
- You should choose a piece of meat with a layer of fat about 2/3 the thickness of your finger, with the lean meat tightly attached to the fat. However, be careful not to choose a piece of meat with too thick a layer of fat and skin on the outside, as that indicates an older pig.
- Additionally, fresh pork belly will have a dry outer membrane, a light red or bright pink color. When cut, the piece of meat should be a bright pink, with soft, pinkish-white skin. The fat interspersed with the lean meat should be bright and firm.
- Absolutely do not buy pork belly that has an unusual smell or leaves a fingerprint when pressed, or has a slimy surface.

How to choose fresh chicken eggs
- You can choose either industrial or free-range chicken eggs for this dish.
- Choose eggs with a uniformly colored shell, without cracks or black spots.
- When you touch the shell, it should feel slightly rough, which indicates freshness.
- When you hold the egg up to the light, if you see a small air cell and the yolk is round and stable without much movement, then it is a fresh egg.
- Avoid buying eggs with pale shells or many black spots.
- Bring the egg close to your ear and shake it lightly; if it makes a loud noise, it indicates that the egg has been stored for a long time.

How to prepare Braised Pork Belly with Eggs

Prepare the ingredients
The pork belly you buy should be rinsed with diluted salt water, then washed a few times with clean water, and cut into small bite-sized pieces.
How to clean pork belly and eliminate odors:
- To prevent the pork from smelling, before cooking, blanch the pork in boiling water for about 3 minutes with 1 smashed shallot, as the shallot will help eliminate the odor very well.
- Additionally, you can also add a little white wine to the boiling water before removing the meat because white wine will help effectively remove the unpleasant smell in the meat.
- After that, rinse the meat with cold water and then proceed to cook it; the meat will no longer have an unpleasant smell, and dishes made from pork will be more delicious.

Boil the chicken eggs in a pot until cooked, then peel the shells.

Make the sauce
Add 2 shallots, 1 spoon of sugar, 1 teaspoon of seasoning powder, 1/2 teaspoon of pepper, 1/2 teaspoon of monosodium glutamate, 1 teaspoon of chili powder, 1 teaspoon of turmeric powder, and 1 crushed chili into the mortar one by one.
Finally, transfer the crushed spice mixture into a bowl, add 4 tablespoons of fish sauce and stir well.

Cook the meat
Add 1 tablespoon of cooking oil into the pot, when the oil is hot, add the chopped pork belly and stir-fry over medium heat for about 3 – 4 minutes, until the pork belly is firm and turns a brown color.
Next, add the entire sauce mixture and stir well, then add the peeled chicken eggs, and finally pour in 500ml of coconut milk, cover the pot and cook on low heat for about 30 minutes until the flavors are well absorbed.
