How to choose fresh, delicious shrimp

  • You should choose live shrimp that are active and have their tails curled down. The head should be firmly attached to the body, and the back of the shrimp should be slightly curved, not straight.
  • Additionally, good shrimp will have a natural smell of river water, without any unusual or no odor.
  • Avoid buying shrimp that have a straight body, with the segments on the shell expanded and showing signs of swelling in the belly and back. These shrimp may have been soaked in chemicals.
  • Furthermore, you should not choose shrimp that have pale, uneven colors and tails spread out like a fan. These shrimp are already spoiled and not tasty anymore.

  • Prepare the shrimp

    To reduce the fishy smell, wash the shrimp with diluted salt water once, then rinse it twice with clean water and let it drain.

  • Stir-fry the shrimp

    Place a pan on the stove, wait until the pan is hot, then add the shrimp, stir for about 2 minutes until the shrimp is dry, then add 1 teaspoon of pink salt and 1 tablespoon of water.

    Stir and toss evenly over medium heat for about 5 minutes until the water evaporates and the shrimp turns red and dry. Taste and adjust the seasoning, then turn off the heat.

    Next, to make the dipping sauce to enjoy with the dish, add 2 tablespoons of sugar and 2 tablespoons of vinegar into a bowl, and stir until the ingredients dissolve completely. Add 1 small piece of ginger sliced thinly and 1 sliced chili. Mix well and enjoy!
