- It’s best to buy whole pork and grind it yourself with a meat grinder to ensure safety and quality when using.

How to choose good dried wood ear mushrooms
- You should prioritize selecting mushrooms with large, thick caps and few small mushrooms at the base.
- The good mushrooms have a dark amber color, the top side is slightly shiny, and the underside is the color of coffee with milk.
- Avoid choosing wood ear mushrooms that look too black, as these may become mushy when soaked in water and are less crispy.
How to choose good salted eggs
- You should choose eggs that are not too large, with no cracks on the outside and no mold spots. When gently shaken, you can feel a bit of water inside the egg; these are standard salted eggs, not kept for too long.

Prepare the ingredients
First, soak the dried wood ear mushrooms in warm water for about 10 – 15 minutes until they expand, then rinse them with cold water.
Next, peel the onion and shallots, then wash them along with the green onions and cilantro.
Then, chop the above ingredients into small pieces.
Tip: To avoid tearing up while cutting onions, you can refer to some tips below:
- Chill the onion in the freezer for 10-15 minutes before cutting.
- Soak the onion in water before cutting.
- Cut a slice of potato and rub it on both sides of the knife, then use that knife to cut the onion.

Marinate the meat
Put the minced meat into a bowl, then add all the chopped mushrooms, onions, shallots, green onions, and cilantro from above into it.
Next, crack 2 eggs into the meat. Add 1/2 tablespoon of fried garlic, 1 teaspoon of sesame oil, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of seasoning powder, 1/2 tablespoon of annatto oil, 1 tablespoon of sugar, 1 tablespoon of fish sauce, and finally, 2 tablespoons of potato starch.
Mix well and marinate for 15 minutes for the meat to absorb the flavors.

Pour into the mold to make the cake
Prepare a mold and use a brush to evenly coat the bottom of the mold with 1/2 tablespoon of annatto oil. Then, add all the marinated meat into the mold and spread it evenly.
Next, cut the salted duck eggs in half and arrange each half on top of the meat.

Steaming the cake
Place the salted egg cake mold into the steamer over medium heat.
While steaming the cake, crack 1 chicken egg and add 1 tablespoon of annatto oil into a bowl and mix the mixture well.
After steaming the cake for 30 minutes, open the lid of the pot and use a brush to evenly spread the chicken egg and annatto oil mixture on the surface of the cake. Then, cover the lid again and continue steaming on low heat for another 3 minutes, and the cake will be cooked!
