  • Boil the eggs

    Duck or chicken eggs should be washed with water after purchase, then placed in a pot of water to boil. Wait for the water to boil, then lower the heat and let it cook for an additional 8 to 12 minutes before removing the eggs to cool. Next, peel the eggs.

    Place the peeled eggs into a pot, add 300ml of water, 1 tablespoon of sugar, and 3 tablespoons of soy sauce, then bring to a boil over medium heat.

    Then reduce to low heat and simmer the eggs until they turn a beautiful brown color, about 6 minutes, and the braising liquid reduces to about 1/3 of the original amount. Adjust the seasoning to taste and then turn off the heat. Sprinkle some chopped green onions on the eggs to finish.
