How to Cook Braised Snakehead Fish with Pepper

  • Prepare the ingredients

    Clean the snakehead fish with water, scrape off the fins, cut off the head and gut the fish. To eliminate the fishy smell, soak the fish in diluted salt water for about 15 minutes, then take it out, make a few diagonal cuts on the fish’s body, and place it in a basket to drain.

    Peeled shallots, wash them clean, and chop them finely.

  • Marinate the fish

    Place the fish in a bowl, marinate with 1 teaspoon of seasoning powder, 1 teaspoon of monosodium glutamate, 1 teaspoon of sugar, 1/2 teaspoon of pepper, 1 teaspoon of oyster sauce, 3 teaspoons of fish sauce, 1/2 of the chopped shallots, and 1 teaspoon of caramel color.

    Mix well and marinate for about 20 minutes.

  • Cooking fish

    Place a pot on the stove, add 2 tablespoons of cooking oil, wait for the oil to heat up, then add the remaining shallots and sauté until fragrant. Once the shallots turn golden brown, gradually place the fish into the pot to cook.

    Pour all the marinating sauce in, cover the pot, cook on high heat for 1 minute, then add about 300ml of water. Continue cooking on high heat for another 3 minutes, then add green and red chili, and ground pepper.

    Cook for another 5 minutes, then adjust the seasoning to your family’s taste, sprinkle a little chopped green onions for decoration, and turn off the stove. Serve the braised fish on a plate.
