Ingredients for Salty Chili Fried Chicken For 1 – 2 people

Chicken 200 gr (choose parts according to preference) Red chili 1 piece (red chili will help the chicken skin have a nice color) Minced shallots 1 tablespoon Minced garlic 1 tablespoon Cooking oil 100 ml Salt 1 tablespoon Common seasoning a little (pepper/ seasoning powder/ monosodium glutamate)

How to choose fresh and delicious chicken

  • You should choose chicken pieces that have a dry surface, and when pressed, the meat still retains its elasticity because this indicates fresh, recently slaughtered meat.
  • Good chicken will have a light yellow color, bright appearance, and when smelled, it has a distinctive raw meat scent without any strange odors.
  • Avoid buying pieces of meat that are pale white or slightly bluish as they may have been chemically treated.
  • Soft, mushy chicken should also be avoided as it is spoiled and no longer usable.

How to prepare Salt and Chilli Fried Chicken

  • Prepare and marinate the chicken

    After buying the chicken, wash it thoroughly with 1/2 tablespoon of salt, then rinse several times with water. After that, put it into an pot and boil briefly for about 3 minutes on high heat, then remove the chicken and let it drain.

    Marinate the prepared chicken with minced shallots and garlic, 1/2 teaspoon of seasoning, 1/3 teaspoon of monosodium glutamate, and 1/3 teaspoon of ground pepper.

    Add 1/2 tablespoon of salt and 1 chili into the mortar to grind them into a paste, then rub this mixture into the chicken. Mix well and let the chicken absorb the spices for 10 minutes.

    After 10 minutes, put on gloves and massage the chicken again; to prevent the chicken from burning when frying, wipe off all the spices from the chicken.

    Tip: To achieve a more beautiful color for the chicken after frying, you can additionally marinate with 1 tablespoon of Korean chili powder, if not available, just grind the salt and chili as directed!

  • Fried Chicken

    Place a pan on the stove, turn the heat to high, bring 100ml of cooking oil to a boil, and then gradually add all the chicken that has been seasoned and fry, reducing the heat to medium-low.

    Continue frying until the chicken is golden on all sides, the total frying time is about 15 minutes until the chicken is cooked. Turn off the heat and remove the chicken to drain the oil.
