How to Choose Fresh Winter Melon

  • You should choose winter melons that are bright green, with firm skins, and have small white spots on the surface.
  • Fresh winter melons will still have a bit of sap on the cut stem, and the skin will have a fine fuzz.
  • Avoid choosing melons that have a pale green skin turning white, or those that are overly large as they are older and may taste sour.
  • Do not buy winter melons that are wilted, have soft skin, or show unusual black spots, as these are old and likely to spoil.

How to cook Braised Winter Melon with Soy Sauce

  • Prepare the ingredients

    After purchasing the winter melon, peel it, then wash it thoroughly and let it drain, cut it into thick pieces about the size of a finger.

    Green onions and cilantro should have their roots trimmed, washed clean with water, and then chopped small.

    Shallots and garlic should be peeled, rinsed briefly, and minced.

  • Fry the winter melon

    Proceed to fry the winter melon by placing a pan on the stove, adding 50ml of cooking oil to heat until boiling, then adding all the cut winter melon to fry on high heat until both sides are evenly golden.

    Place a pan on the stove, pour out some cooking oil, leaving about 2 tablespoons of cooking oil.

    Next, sauté minced shallots and minced garlic over medium heat, add all the fried gourd, quickly add 2 tablespoons of soy sauce, 2 tablespoons of water, 1 teaspoon of vegetarian seasoning, 1/2 teaspoon of salt, and 1/2 teaspoon of sugar.

    Stir well for the gourd to absorb the seasoning, taste and adjust, and simmer for about 5 minutes until the sauce thickens, then turn off the heat and add chopped green onions and coriander.
