  • Choose crab legs that are of moderate size; when held, they feel heavy and firm, indicating they will have more meat and be sweeter.
  • It’s best to buy crab legs that have been kept refrigerated to ensure quality and food safety. Avoid purchasing legs that have been left at room temperature for too long as they may develop an unpleasant smell and be unsafe for consumption.
  • If you’re buying whole crabs, you should do so around the beginning and end of the lunar month. This is when the crab meat is the most firm and sweet.
  • Additionally, avoid buying crabs in the middle of the lunar month because this is when they shed their shells, resulting in soft, mushy meat that is less firm and not tasty.

How to choose fresh dried shrimp

  • Choose dried shrimp that have a natural yellow color inside, not too vibrant, and free from black or white mold.
  • When held, they should feel dry, not too moist, as stored shrimp can easily become moldy.
  • You should look for dried shrimp at reputable supermarkets or grocery stores to ensure quality and safety for consumption.

How to prepare Salted Crab Claws

  • Prepare the ingredients

    The crab claws bought should be washed several times with water to remove dirt. You can use a toothbrush to scrub the dirty parts stuck on the shell and then rinse with water.

    Dried shrimp should be soaked in warm water for about 15 minutes to soften, then put into a food processor to grind into a paste.

    Tip: If you don’t have a grinder, you can put the dried shrimp in a mortar and pound it until finely ground!

  • Boil the crab claws

    After cleaning, place the crab claws into a pot with 70ml of water, cover, and boil over medium heat for about 10 minutes.

    Tip:
    • You should not boil the crab claws with too much water; just enough to cover the bottom of the pot about one finger’s width to avoid burning. Boiling with too much water will make the crab meat lose its sweetness.
    • If you have a steamer, you can steam the crab claws, which will retain a sweeter taste.

    After steaming, take the mantis shrimp out and place it in a basket, using a hammer or pestle to gently crush the shell. Be careful to crush it lightly so that the flesh remains intact, avoiding it getting smashed.

  • Roasted shrimp salt

    Place a pan on the stove, then add 2 teaspoons of salt, 1 teaspoon of MSG, and 1 teaspoon of sugar, stir evenly until the salt turns slightly golden.

    Next, add the ground dried shrimp and roast for about 2 minutes on low heat.

  • Making mantis shrimp with salt

    Place another pan on the stove with 1 tablespoon of cooking oil. When the oil is hot, add 1 minced garlic clove and sauté until fragrant.

    Then add the mantis shrimp and each spoonful of the roasted shrimp salt together, using chopsticks to stir evenly so that the mantis shrimp absorbs the seasoning.

    Season to taste and stir for about 5 – 7 minutes, then turn off the heat.

    Tip: You should not add all the shrimp salt at once but should add it spoon by spoon to adjust the salty-sweet flavor to your liking.

    The salted fried crab dish is fragrant with the enticing smell of fried garlic and has a visually appealing orange-red color. The crab is seasoned to be flavorful, with a moderate sweet and salty taste, served with chewy, sweet dried shrimp.

    Dip it in seafood dipping sauce, add a bit of Vietnamese coriander, and enjoy a few cans of soft drinks or cold beer to fully enjoy the vibrant Euro season!
