- It is advisable to buy crab claws that are refrigerated to ensure quality and food safety.
- If buying whole crabs, you should buy them at the beginning and end of the lunar month, as this is when the crab meat is the firmest and sweetest.
- Avoid buying crabs in the middle of the lunar month, as this is when crabs molt, leading to soft, mushy meat that is less firm and not tasty.

How to prepare Salt and Chili Roasted Crab Claw

Prepare the crab claws
Wash 1kg of crab claws thoroughly. To let the crab claws absorb the seasoning and be easier to eat, use a crab cutter or a pestle to crack the shell slightly.
Tip: To avoid the crab claws being too salty after roasting, you should only crack the shell just enough for it to break, not crush it completely.

Grind the chili salt
Put 5 fresh chilies, 1 tablespoon of salt, and 1 teaspoon of seasoning powder into a blender, then blend until smooth.

Cook the salt
Place a pan on the stove, add 1 ladle of clean water, 2 tablespoons of Tây Ninh salt, and 1 teaspoon of monosodium glutamate, then add the ground salt mixture and stir well to dissolve the seasoning.

Roast the crab claws
Once the seasoning is dissolved, add the crab claws to the pan and stir-fry evenly over medium heat, using a spatula to continuously stir so that the crab claws absorb the seasoning evenly and the salt does not burn.
Completion
When the pan is dry, and the salt is evenly coated on the crab claws, turn off the heat and plate the crab claws.


Final Product
Spicy salted crab claws after completion will have an attractive orange-red color of the crab claws and chili, with a salty and spicy taste of the salt and chili blending into the firm and sweet crab meat that will make you continuously lick your lips.
