Beef brisket 700 gr Fresh noodles 1.5 kg Onion 1 bulb Lemongrass 8 stalks Green onion/cilantro A little Garlic 1 bulb Chili paste A little White wine A little Beef noodle seasoning 2 packets (80gr/ packet) Accompanying vegetables 200 gr (lettuce/ banana flower/ mint/ basil) Cooking oil 1 tablespoon Fish sauce 1 tablespoon Common seasonings A little (salt/ sugar/ monosodium glutamate/ seasoning powder/ pepper)

    To remove the odor, rinse the beef brisket with white wine for about 5 minutes, then rinse again with clean water. Let the beef brisket drain and then cut it into small slices.

    Put the beef into a bowl and marinate with: 1/2 of the minced lemongrass, 1/2 of the minced garlic, 1 packet of beef noodle seasoning (80g), 1 teaspoon of monosodium glutamate, 2 tablespoons of sugar, 1 teaspoon of salt, 1 tablespoon of seasoning powder, a little pepper, and mix well.

    Cover the bowl with plastic wrap and place it in the refrigerator for about 30 minutes to let the meat absorb the spices.

  • Cooking beef brisket noodles

    Place a pot on the stove with 1 tablespoon of cooking oil, heat the oil until it is hot over medium heat, then add all the minced garlic and smashed lemongrass into the pot and sauté until fragrant and golden.

    Continue by adding half of the marinated beef to stir-fry briefly to create color for the broth over medium heat for about 5 minutes.

    Next, pour 3 liters of water into the pot, add 1 onion, 1 packet of beef stew seasoning (or half a packet) and bring the water to a boil.

    Add the beef into the pot and cook for about 15 minutes, then season with 1 tablespoon of fish sauce, 1 tablespoon of sugar, and 1 teaspoon of seasoning powder, then stir well to completely dissolve the spices.

    Season again to taste, turn off the stove and add the green onions and cilantro.

    • You can add chili powder or fresh chili to the pot when seasoning if you want it spicy.
    • The onion helps to make the broth sweeter, so after cooking, you should remove the onion from the pot.
    • To ensure the brisket is evenly cooked, crispy, and tastier, you should cook it for a longer time, because the brisket has a fairly thick layer of fat on the outside, so if it is not cooked thoroughly, it will be very tough and not edible.
