  • You should not buy pork pieces with a dark red color, bruises, or meat that is not firm to the touch as these may be from sick pigs or have been slaughtered for a long time.
  • Absolutely do not buy meat with unusual odors, or with lumps on the meat fibers as these are often from pigs infected with parasites.

  • Prepare the ingredients

    To remove the unpleasant smell from the pork, wash it once with diluted saltwater, then rinse with clean water, drain, and cut into thin, bite-sized pieces.

    • Method 1: Blanch the pork in boiling water for about 3 minutes, then rinse with cold water and drain.
    • Method 2: Rub salt into the piece of meat until the salt dissolves, then rinse several times with water and drain.
    • Method 3: Blanch the pork in boiling water with a little white wine for about 3 minutes, then rinse clean.

    Chives and coriander are washed clean and cut into bite-sized pieces about 2 finger lengths long.

    The onion is peeled, washed, cut in half, and sliced into wedges. The chili is minced finely.

  • Marinate the meat

    Add the meat along with 1/2 tablespoon of cooking oil, 1.5 tablespoons of fish sauce, 2 teaspoons of sugar, 1.5 teaspoons of seasoning powder, 1/2 teaspoon of monosodium glutamate, 1/4 teaspoon of pepper, 1/2 the amount of minced garlic, and 1/2 the amount of minced lemongrass into a bowl. Mix well and marinate for 15 minutes.

  • Stir-fry meat

    Add 1 tablespoon of cooking oil and the remaining lemongrass into the pan, sauté until fragrant, then add the marinated meat.

    Adjust the seasoning to taste. Add a little chopped green onions and 1/4 teaspoon of pepper, stir well, and then turn off the heat.

    To make the dipping sauce, mix the remaining minced garlic with 2 finely chopped chili peppers, 1.5 tablespoons of sugar, 2.5 tablespoons of fish sauce, the juice of 1/2 lime, and 4 tablespoons of water in a bowl, then use a spoon to stir until the ingredients dissolve.

    Finally, you boil 500ml of water, then briefly blanch the noodles and take them out to drain.
