Sour bamboo shoots 300 gr Fresh noodles 1 kg Wood ear mushrooms 50 gr Ground pork 400 gr Pork sausage 300 gr Tamarind juice 1 cup (rice bowl) Tomatoes 3 fruits Shallots 1 bulb Green onions a little Accompanying vegetables a little (lettuce/ herbs/ basil) Fish sauce 1 tablespoon Cooking oil 1 tablespoon Common spices a little (salt/ sugar/ seasoning powder/ pepper)

  • Good sour bamboo shoots, not soaked in chemicals, will have an ivory white color.
  • Choose pieces that are chewy, not easily broken, and do not have a too shiny appearance.
  • They should have a light, characteristic aroma of bamboo shoots and no chemical smell.

How to choose fresh and delicious pork

  • Delicious pork will have a bright pink color, a dry membrane, a slightly firm surface, and tender meat.
  • When pressed, it should have elasticity, be dry, and not ooze slime.

How to Prepare Sour Bamboo Shoot Noodles

  • Prepare Ingredients

    Sour bamboo shoots bought should be rinsed with clean water. Prepare a pot of water, add the bamboo shoots, and boil for about 5 minutes. Then remove the bamboo shoots, rinse once with cold water, cut into bite-sized pieces, and drain.

    Wash the tomatoes, and cut them into wedges. Peel the shallots, wash them, and chop them finely.

    Soak the wood ear mushrooms in water for about 15 minutes until they soften. Rinse with water twice, cut off the stems, and chop finely.

    Pick the leaves of the accompanying vegetables, wash them clean, and let them drain. Cut off the roots of the green onions, wash them, and chop them finely.

  • Marinate the Meatballs

    In a bowl, combine the minced pork, processed pork sausage, and chopped wood ear mushrooms, adding 2 spoons of seasoning powder, 1/2 tablespoon of salt, and 2 teaspoons of ground pepper, then mix well.

    Once the mixture is well combined, use a spoon to press the mixture around the bowl in one direction to make the meatballs firmer when eating.

  • Cook the broth

    Put a pot on the stove, add 1 tablespoon of cooking oil and sauté the minced shallots until fragrant. Then add the tomatoes and stir on the stove for about 2 minutes, then add the sour bamboo shoots, season with 1/2 tablespoon of sugar and 1/2 tablespoon of salt, and stir on the stove for another 2 minutes.

    Then add 1 liter of water to the pot, bring to a boil. When the water boils, add 1 cup of tamarind juice. Season with 3 teaspoons of seasoning, 3 tablespoons of sugar, and 1 tablespoon of salt.

    Adjust the broth to suit your family’s taste! Don’t forget to add 1 tablespoon of fish sauce for a richer flavor.

    Tip:
    • Remember to skim off the foam while cooking to keep your broth clear!
    • If you don’t like sour food, you can reduce the amount of tamarind juice.

    You use a spoon to scoop each fish ball and drop it into the pot; when the fish balls float to the surface, they are cooked and ready to enjoy.

    When eating, you just need to put the noodles in a bowl, ladle in the broth along with sour bamboo shoots, tomatoes, and fish balls, then sprinkle some chopped green onions on top, and you’re done. Enjoy with fresh herbs as well.

    The sour bamboo shoot noodle dish has a light sour taste from the broth, the fish balls are naturally chewy and sweet, and the fresh herbs make the dish not at all boring.
