How to choose fresh lamb meat
- You can find lamb meat at food stores, supermarkets, or reputable places you know well, that are clear about the origin and quality of the meat. The price of lamb is quite high, ranging from 250,000 VNĐ to 500,000 VNĐ/kg depending on the cut and whether the lamb is raised in Vietnam or imported lamb (price list updated on 24/04/2021).
- Choose pieces of lamb that are pink-red in color, with white and dry fat; when pressed with your hand, the meat feels firm and elastic.
- Do not choose pieces of lamb that are dark, have yellowish fat, or have an unpleasant odor and are slimy; these may be pieces of lamb that have been stored for a long time and are not fresh.

- Choose white beans that are plump, shiny, of uniform size, and have the characteristic aroma of beans.
- You should buy beans from reputable stores with clear origin and remember to check that the packaging is intact and has a long shelf life.

Prepare the ingredients
To clean the lamb and remove the odor, soak it in a mixture of a little white wine and water for about 10 minutes, then rinse well with cold water several times. After that, use a knife to chop it into bite-sized pieces, drain, and use paper towels to dry.
Simple and effective ways to remove the smell of lamb
- You can soak the lamb in diluted saltwater for about 10 minutes and then rinse it with clean water.
- Using ginger, lemon, or vinegar to rub on the lamb for about 10 minutes is also an effective way to remove the smell.
- Blanch the meat in boiling water to eliminate the odor.
Peel and dice the onion.
Soak the white beans in water for about 6 hours or overnight, then put them in a pot to boil with 500ml of water for about 45 minutes until the beans are soft. Finally, scoop the beans into a bowl.

Sauté white beans with tomato sauce
Place a pot on the stove, add 2 tablespoons of cooking oil. When the oil is hot, add diced onion and sauté until fragrant over low heat for about 2 minutes.
Next, add 60g of cooked soft white beans, 1 tablespoon of chicken seasoning, 1 tablespoon of salt, 2 tablespoons of concentrated tomato sauce, and 1/2 tablespoon of turmeric powder, and stir-fry for about 2 – 5 minutes.

Make the broth
Place a pot on the stove, pour in 1.3 liters of water, and add the lamb to simmer for about 1 hour over low heat.
Tip: To shorten the cooking time, you can use a pressure cooker to quickly and deliciously stew the lamb.
After simmering until the meat is tender, pour the sautéed white bean mixture with tomato sauce into the pot, cover, and simmer on low heat for about 30 minutes. Adjust the seasoning to taste, then turn off the heat.
