  • Choose ducks with a round breast, thick neck and belly skin; when pulling the two wings together, if they cross just enough, you should buy them.
  • For pre-prepared ducks, choose those with skin that is a yellow color, not too dark, with no spots or bruises; when pressed lightly, the meat should be firm with good elasticity.
  • In addition, you should choose Muscovy ducks instead of other types of ducks because they are usually fatter and have less down, which helps reduce the time for feather cleaning and makes the dish much tastier.

How to choose fresh lotus seeds

  • Old lotus seeds will have a creamy white or dark yellow color, the outer layer is plump and has a very fragrant taste without being crunchy; when cooked, they will also have a characteristic aroma.
  • To buy good lotus seeds, you should buy them freshly picked from lotus ponds, buy black lotus seeds to peel them yourself, choosing round, intact seeds.
  • If you don’t have time to peel lotus seeds, you can find pre-peeled lotus seeds (silk lotus) at reputable stores, markets, and large supermarkets.

How to choose good wood ear mushrooms

  • You can choose dried or fresh wood ear mushrooms. However, it is still recommended to use dried wood ear mushrooms because fresh wood ear mushrooms often contain light-sensitive substances that can cause itching, discomfort, or even severe allergic reactions leading to skin necrosis.
  • Choose wood ear mushrooms with large, thick ears and minimal small mushrooms at the base, with a dark amber color, slightly shiny (for the top of the mushroom) and a coffee milk color (for the bottom of the mushroom).
  • Avoid buying wood ear mushrooms that are too black, as this type may become mushy when soaked in water and is less crunchy.

Ingredients for duck stewed with lotus seeds

How to cook Duck stewed with lotus seeds

  • Prepare and marinate the duck meat

    Soak the duck in a mixture of sliced ginger and alcohol for 15 minutes to reduce the odor, then rinse several times with clean water and drain.

    Put the duck in a pot and marinate with 2 teaspoons of five-spice powder and 2 tablespoons of seasoning powder. Then, rub the spice mixture all over the duck meat and let it marinate for 15 minutes.

    How to clean duck meat without odor:

    There are 2 methods you can apply to clean the duck meat and eliminate the odor.

    • Method 1: Use salt to scrub the duck’s body and then rinse with clean water. After that, scrub and massage the entire duck again in a mixture of alcohol and sliced ginger to clean it and remove the odor. Finally, rinse thoroughly with water and let it drain.
    • Method 2: Use a mixture of salt and lemon (vinegar) to scrub the entire duck. This is also an effective way to reduce the odor and is commonly used.

  • Prepare other ingredients

    Use a fork or the tip of a sharp stick to extract the lotus seed core from the seed while keeping the seed intact. Then, take a portion of the lotus seeds and grind them finely.

    Soak the wood ear mushrooms in water until they expand and soften, then chop them into small pieces. Trim the stems of the seafood mushrooms, rinse them briefly in diluted salt water, then wash them again with clean water and let them drain.

    Pick the leaves of the mustard greens, wash them thoroughly in diluted salt water, then let them drain.

    How to properly prepare wood ear mushrooms
    • Soak the mushrooms in cold water for a maximum of about 3 hours to soften them. If soaked too long, the toxic substances in the mushrooms will increase, which is not good for health.
    • Absolutely do not soak in hot water because hot water will stimulate the toxins in the wood ear mushrooms, causing food poisoning.
    • After soaking, simply rinse them a few times with cold water.

    Put the crushed lotus seeds into a bowl along with shallots, mushrooms, minced meat, 1 cup of cooked rice, 1 tablespoon of seasoning powder, and 1/2 tablespoon of monosodium glutamate, then mix the mixture well.

    After that, stuff this mixture into the duck’s belly and sew it up.

  • Fry the Duck

    Place a pan on the stove, add 200ml of cooking oil to the pan. Wait for the oil to heat up, then add the duck to fry. During the frying process, use a ladle to pour oil over the duck until the skin becomes firm and has a slightly charred golden color, then turn off the heat and remove the duck to drain the oil.

    Put the fried duck into another pot and place it on the stove. Gradually pour in enough water to barely cover the duck along with the remaining lotus seeds that have not been crushed, cover the pot, and stew for about 30 minutes.

    Then, add the seafood mushrooms and greens to the pot and cook for another 3 minutes before turning off the heat, and serve everything on a plate.
