Shrimp 200 gr Thai basil 3 sprigs Spring roll wrappers 1 pack Crispy rice paper 1 pack Battering flour 1 tablespoon Turmeric powder 1 teaspoon Cooking oil 4 tablespoons Salt 1 teaspoon Ground pepper 1 teaspoon

How to Choose Good Shrimp

  • When buying shrimp, choose those with a transparent shell, feel that they are not slimy, and have a slightly ocean smell but not fishy. Pay attention to the shrimp’s head, as if the head is too red, it indicates that these shrimp have been frozen for many days.
  • Additionally, shrimp with tails that are tightly closed, and where the head and body are closely attached, are fresh shrimp that you should buy.
  • Avoid shrimp that have dark patches or lack uniform color, are slimy, have bodies bent into a circular shape, or those that have lost their heads.

How to prepare Shrimp Spring Rolls

  • Prepare the ingredients

    Pick fresh mint leaves, wash them thoroughly with water, then chop them finely.

    When buying shrimp, peel off the shell from the head, then use a toothpick to pierce through the top of the shrimp body to remove the black vein on the back of the shrimp. After cleaning the shrimp, rinse them thoroughly with water and let them drain.

    Put the shrimp in a bowl, marinate with 1 teaspoon of salt, 1 tablespoon of ground pepper, and chopped mint leaves for 15 minutes to let the shrimp absorb the seasoning.

    After marinating for 15 minutes, take the shrimp out and wrap them with a layer of rice paper, then wrap another layer of crispy rice paper on the outside. Continue wrapping the shrimp until all the shrimp are used up.

  • Fry the shrimp

    Put into an bowl 1 tablespoon of batter, 1 teaspoon of turmeric powder along with 1/2 cup of filtered water (rice bowl) and stir well to dissolve the mixture, then dip the shrimp that you wrapped earlier into the batter.

    Next, place a pan on the stove, add 4 tablespoons of cooking oil and heat over medium heat. Wait for the oil to become hot, then add the wrapped shrimp to fry until golden brown on both sides, then take the shrimp out onto a plate and turn off the stove.

    Tip: To avoid burning the shrimp while frying, you should turn the shrimp frequently every 3 – 5 minutes!
