Pig ears and pig skin 1 kg Fresh coconut water 1 cup (rice bowl) Chopped green onions 1 stalk Minced garlic 1 tablespoon Lemon juice 1 tablespoon Cooking oil 1 tablespoon Fish sauce 2 tablespoons Common spices A little (salt/ sugar/ monosodium glutamate/ ground pepper)

How to prepare Braised Pig Ears in Fish Sauce

  • Prepare the pig ears

    After purchasing the pig ears, wash them thoroughly and rub them with lemon juice for about 5 minutes. Rinse several times with clean water and let them drain.

    To boil the pig ears quickly, cut them into smaller pieces.

    • Method 1: After scraping off the hair and dirt from the pig ears, use vinegar or a mixture of salt and lemon juice to scrub the pig ears thoroughly. Then, soak the pig ears in lemon juice or vinegar for about 5 minutes, then rinse clean with water and let them drain.
    • Method 2: Soak the pig ears in rice water for about 10 minutes, then scrape off the dirt, and use lemon to scrub the surface of the pig ears until clean, then rinse again and let them drain.
    • Method 3: Alternatively, you can use flour or starch to scrub vigorously on the pig ears to create foam, then use a knife to scrape off this foam, rinse clean. Repeating this process multiple times helps the pig ears become white, clean, and odor-free.

  • Boil pig ears

    Add about 500ml of water into the pot and boil over high heat. Once the water is boiling, add the pig ears and boil for about 10 – 15 minutes until cooked, then remove them.

    Place a pot on the stove, heat 1 tablespoon of cooking oil and sauté the minced garlic until fragrant. Once the garlic is fragrant and golden, add the marinated pig ears.

    Quickly stir-fry on high heat to seal the pig ears, then when the marinade thickens, add 1 cup (rice bowl) of fresh coconut water and 1/2 cup of water (rice bowl). Braise the pig ears on low heat for about 15 – 20 minutes until the water reduces, then season to taste, add finely chopped green onions, stir well until the green onions are cooked, then turn off the heat.
