- If the stem is still fresh and not wilted, it means the apple is freshly picked and delicious.
- The more fragrant the fruit smells, the riper and sweeter the apple.
- When holding the apple, if it feels firm and heavy, it will be crunchier.
- When you snap your fingers on the apple, the one that makes a loud, clear sound is the crunchier and tastier one.

How to Make Vegan Apple Pie
-
Mixing the Dough
Chilled vegetable butter should be placed in the refrigerator to harden, then cut into 1cm square pieces.
Gradually add the ingredients into a bowl, including: 250g of flour, 15g of sugar, and 5g of salt, and mix well. Next, add 125g of butter in 3 portions into the flour bowl, mashing the butter with a fork each time before mixing it with the flour.
Then, divide 90ml of cold water into 3 portions and add it to the flour bowl, mixing well each time you add water.
-
Kneading the Dough
Once the dough is uniform, knead it by hand into a ball.
Divide the dough ball into 2 parts, shape each part into a ball, and wrap them tightly in plastic wrap, then place in the refrigerator for 1 hour.
-
Marinate the apples
While waiting for the dough, proceed to marinate the apples.
Peel the green apples, remove the seeds. Cut the apples into thin slices vertically.
Place the apples in a bowl and mix well with 200g of sugar, grated lemon zest, 40g of cornstarch, the juice of half a lemon, 5ml of coconut oil, 2g of salt, and 20g of cinnamon powder. Marinate the apples for about 15 minutes to absorb the flavors.
Tips for preparing to prevent apples from browning
- Method 1: Soak in diluted lemon water for about 3 minutes.
- Method 2: Soak in diluted salt water for about 4 minutes.
- Method 3: Use fresh fruit powder (a powdered mixture of citric acid and ascorbic acid) sprinkled on the apples after cutting.
- Method 4: Blanch the apples briefly after cutting, as boiling water will inhibit the enzymes in the apples, preventing them from coming into contact with the outside air, which causes browning.
-
Roll out the dough
After refrigerating the two dough balls for the appropriate time, take them out and place them on a clean surface that has been dusted with flour. Roll in multiple directions to make the dough about 1.5mm thick.
Tip: Dust with flour to help roll the dough easily, preventing it from sticking to your hands, the cutting board, or the rolling pin.
-
Pouring into the mold
Roll the dough onto a rolling pin and lay it in a deep dish, cutting off the excess dough along the rim of the dish. Inside, use a fork to poke several holes in the dough to help the pie release steam while baking.
Next, scoop apples into the center of the dough dish, layer the remaining piece of dough on top, cut off the excess edges, and use a fork to press the two edges of the dough together.
Brush the top of the pie with 15ml of coconut oil, evenly sprinkle 5g of powdered sugar and 5g of cinnamon. Finally, use a knife to make 4 small slits on the surface of the pie and then bake it.
Note: You can buy coconut oil from reputable stores to ensure quality or make it at home.
