Soybeans 300 gr All-purpose flour 250 gr Tapioca flour 150 gr Cornstarch 150 gr Yeast 20 gr Salt 1 tablespoon
How to choose good soybeans
- You should choose soybeans that are evenly sized, not too big, not too small, and feel solid in your hand.
- Good soybeans will have a slightly dark yellow color, shiny surface, and are plump.
- Do not choose beans that have many black spots on the surface or are broken.

How to make Vegetarian Spare Ribs

Soak and blend soybeans
Rinse the soybeans thoroughly, remove any damaged beans, and soak them in water for about 2 hours.
After the soybeans have soaked and expanded, place them in the blender, add 1000ml of filtered water, blend until smooth for about 5 minutes, then pour into a large bowl, and mix in 1 tablespoon of salt.

Mix vegetarian spare rib dough
Add 250gr of all-purpose flour, 150gr of cornstarch, and 150gr of tapioca flour to the bowl of blended soybeans, and mix well with a whisk.
Next, add 20gr of yeast, continue to mix until the mixture is well combined, then cover the bowl and let it rest for 60 minutes.

Steam the vegetarian spare ribs dough
When the dough has risen for enough time, gently stir it in one direction with a whisk and pour the mixture into the mold.
Place a steaming pot on the stove, add 1 liter of water and bring to a boil. When the water is boiling, place the mold into the steamer, cover and steam for about 30 minutes, then turn off the heat and open the pot lid to let the ribs cool.

Dehydrate the vegetarian spare ribs
When the ribs have cooled down, take them out of the mold, use a knife to cut the ribs into bite-sized pieces, then arrange them on a drying tray and place the tray in a dehydrator at 70 degrees Celsius for 4 hours.
Tip: If you don’t have a dehydrator at home, you can arrange the vegetarian spare ribs on a tray or rack, then take them outside to sun-dry. You should dry them in the sun for about 2 days for the ribs to be dry! -
Final Product
The vegetarian ribs after drying have a beautiful golden color, with a chewy and delicious texture.
