How to choose clean fresh chicken eggs
- To choose clean fresh chicken eggs, you should observe the eggshell. Fresh chicken eggs will have a dark shell, and the surface of the egg will feel slightly rough when touched.
- Hold the egg close to your ear and shake it gently; if you don’t hear the egg inside moving, then this is a fresh egg.
- On the contrary, you should avoid eggs that have a pale color, a smooth surface, and produce a clear sound when shaken as these are old eggs, stored for a long time, and may be spoiled inside.
How to prepare Stir-fried Rice Noodles with Mixed Ingredients

Prepare the ingredients
Put the rice noodles into a bowl, add cold water just enough to cover the surface and soak for about 5 – 7 minutes until the noodles are soft, then remove the noodles and place them in a strainer to drain.
Soak the black mushrooms in cold water for about 10 minutes until fully expanded, then rinse and slice thinly. Wash the carrot, peel it, and then cut into thin strips about 3 finger lengths long.
Using a knife, cut off the root of the enoki mushrooms and then slice them about 1/4 finger length thick and place them in a bowl. Peel the onion, cut off the root, then wash and cut the onion into wedges.
Cut off the roots and yellow leaves of the green onions, then wash and cut into pieces about 2 finger lengths long. Crack the eggs into a bowl, add 1/2 spoon of salt to the bowl and use chopsticks to stir until the seasoning is dissolved.

Making Mixed Fried Rice Noodles
Place a pan on the stove, add 2 tablespoons of cooking oil and turn on medium heat. When the oil is hot, add the egg mixture and fry until golden on both sides for about 5 minutes, then transfer the eggs to a plate. Wait for the eggs to cool slightly, then cut them into slices about 1 finger thick.
Continue using the same pan that you fried the eggs in, adding 2 tablespoons of cooking oil. When the oil is hot, add all the prepared carrots, wood ear mushrooms, and oyster mushrooms and stir-fry on high heat for about 3 minutes.
Next, add the onion, 1/2 tablespoon of seasoning powder, 1/2 tablespoon of broth seasoning, 1/2 tablespoon of salt, and 1/2 tablespoon of ground pepper, and stir-fry for another 2 minutes.
Finally, add the soaked rice noodles, sliced eggs, 1 tablespoon of oyster sauce, and chopped green onions to the pan, stir well on high heat for another 3 minutes, adjust the seasoning to taste, then turn off the heat.
