How to choose delicious bitter melon:
- You should choose bitter melons that are of moderate size, with evenly spaced large eyes, and have dark green skin.
- Avoid choosing bitter melons that are too large, shiny green, or have smooth skin as they may contain growth hormones and are not safe.
- If buying bitter melons at traditional markets, you should go in the early morning as the outside environment is not suitable for preserving agricultural products, and especially you will have more options.
How to choose delicious dried snakehead fish:
- You should choose the type of dried snakehead fish that is less salty as it will be easier to season, and pick fish that has a natural cockroach brown color, not dyed.
- Press on the fish to feel a certain elasticity, not too hard and not too soft. The fish smell should be slightly fishy but not too strong or pungent.
- It is best to buy fish from reputable establishments, ensuring the fish is not moldy for safety.
Prepare Dried Fish
Wash the dried snakehead fish clean, cut it into bite-sized pieces as shown, and place it in a pot of boiling water to cook for about 5 – 10 minutes until the fish is soft, then drain.
After boiling the dried fish, make sure it is completely drained or pat it dry, then use a knife to cut away the bones.
Heat a pan on medium heat, add oil to the pan, and when the oil is hot, fry the fish quickly until it is golden on all sides.


Simmer Dried Fish
Heat another pan on medium heat, sauté minced garlic and onion until fragrant, then add 2 tablespoons of water, 1 tablespoon of fish sauce, 1 tablespoon of sugar, 1.5 tablespoons of rice vinegar, and 1/2 teaspoon of minced chili. Bring the mixture to a boil, then reduce the heat and add the fried dried fish, simmering gently until the liquid reduces.
After that, gently crush and tear the fish into small pieces to mix into the salad.

Mix the Salad
Gently mix the bitter melon, radish, onion, mint leaves, sliced chili, and dried fish in a large bowl.
Arrange the bean sprouts on a plate, place the salad mixture on top, garnish with a bit of mayonnaise, and finally sprinkle toasted sesame seeds on top. When eating, mix everything together well.
