  • Additionally, fresh eggplants feel quite firm when held, and a gentle press on the skin will give a sense of firmness.
  • Avoid choosing eggplants with wrinkled skin, bruises, or scratches, wilted stems, and spongy flesh.

  • You should choose mushrooms that are white, evenly colored, with a thin layer of fuzz on the top, smooth to the touch, and have a distinctive aroma.
  • Avoid buying damaged, bruised, or broken snow mushrooms as they may be spoiled and harmful to health.

How to cook Stir-fried Eggplant with Mushrooms

  • Prepare the ingredients

    Eggplants should be cut into bite-sized pieces, soaked in diluted salt water for about 15 minutes, then rinsed with clean water.

    Peel the carrots, wash them clean, and use a knife to slice them thinly. Clean the snow mushrooms by cutting off the stems, washing them thoroughly, and letting them drain. Wash the bell peppers and cut them into square pieces about 2 finger lengths.

    Wash the lemongrass, remove the roots, crush it, and then chop it finely.

    Place a pan on the stove, add 4 tablespoons of cooking oil and heat over medium flame, then add lemongrass to sauté for about 2 minutes until fragrant.

    Once the lemongrass is golden and fragrant, add all the prepared eggplant and carrot, stir-frying for about 3 – 5 minutes until the eggplant and carrot are slightly soft, then add mushrooms and bell peppers.

    After that, add about 4 tablespoons of soy sauce, 2 tablespoons of sugar, 1 tablespoon of chili sauce, and 2 tablespoons of warm water, then stir well for 7 – 10 minutes.

    Season to taste according to your family’s preference, then turn off the heat. Scoop the dish onto a plate and enjoy.
