  • To choose fresh and quality pork, first, select pieces of meat with light pink lean meat and cloudy white fat. The fat and lean meat should be attached to each other and not separated.
  • Next, choose pieces of meat that feel elastic when gently pressed with your hand, and the surface of the meat should be dry. When smelling, it should have the characteristic smell of pork without being foul or fishy.
  • Do not choose pork that has a pale color, has bruises or dark spots on the surface, or is slimy. These are signs that the meat has been stored for too long and has gone bad.

  • First, to choose dried shiitake mushrooms, you should observe the color of the mushrooms. The cap of the shiitake mushroom should be light brown and feel light in hand.

  • To choose quality dried wood ear mushrooms, you should prioritize mushrooms that are thick and large. The top side of the mushroom should be amber in color and slightly shiny, while the underside should be brown-gray.
  • You should not choose wood ear mushrooms that have a dark black top because this type of mushroom usually becomes mushy after soaking instead of being crispy or chewy.

How to prepare Brown Rice Rolls

  • Prepare the ingredients

    Put the wood ear mushrooms and shiitake mushrooms into a bowl, add enough water to cover, then soak for 15 minutes until the mushrooms soften. After soaking, remove the mushrooms, cut off the stems, rinse well, and chop finely.

    Cut off the stems of red onion, peel, rinse, and slice thinly. Garlic cut off the root and peel, and for chili, remove the stem, then rinse and chop finely.

    Put the ground pork in a bowl and marinate it with a mixture of seasonings including: sliced shallots, dried mushrooms, finely chopped shiitake mushrooms, 1 tablespoon of seasoning powder, and 1 teaspoon of MSG. Use a spoon to mix well and let it marinate for 5 – 10 minutes for the meat to absorb the seasonings evenly.

    Next, place a pan on the stove, add 1 tablespoon of cooking oil into the pan and turn on the high heat. When the oil is hot, add the entire marinated pork mixture and stir continuously for about 5 – 10 minutes until the meat is cooked and firm, then turn off the heat and transfer the meat to a bowl to use as filling for the rolls.

  • Making regular brown rice rolls

    Prepare a cutting board or plate to roll the rice rolls and then spread a thin layer of cooking oil on the surface so that the rice paper does not stick.

    Dip the brown rice paper in clean water and wait about 20 seconds for the paper to soften, then spread it evenly on the oiled cutting board.

    Use a spoon to scoop the filling onto the rice paper, then roll it up and place it on a plate. Similarly, continue with the remaining pieces of rice paper until all are finished.

    After rolling, place the plate of rice rolls into a steamer for about 10 minutes to cook the rolls. Finally, take the plate out and sprinkle some fried shallots on top to complete.

    Place a non-stick pan on the stove, then spread a thin layer of cooking oil in the pan and turn on low heat.

    Keep the rice paper whole and soak it in clean water until soft, then place it in the pan. Next, crack the eggs in, using a spoon to spread the eggs evenly over the surface of the pancake and cover with a lid for about 3 – 5 minutes to cook the eggs.

    Once the eggs are cooked, add the filling to the pancake, roll it up similar to before, and place it on a plate, sprinkling a little fried onion on top to finish.

  • Make the dipping sauce

    The dipping sauce served with the rice rolls is made from fish sauce and warm water in a ratio of 2:1. Then, add 1 teaspoon of monosodium glutamate, 1 teaspoon of sugar, and the juice of 1 lemon.

    Next, use a spoon to stir well until the sugar dissolves, then add all the minced garlic and chili. Adjust the seasoning of the dipping sauce to suit your taste!

    The brown rice rolls have a very eye-catching light pink color. Biting into one, you can feel the soft, chewy skin accompanied by the savory filling of meat and mushrooms, along with the sweet and sour dipping sauce that is just right.
