Young mango 2 kg (you can use other types of mango) Chili 5 pieces Fish sauce 60 ml Sugar 1 cup (rice bowl) Clean water 4 cups (rice bowl) Salt 3.5 tablespoons

How to choose fresh young mango

  • To choose fresh young mango, you should pick those that are medium-sized, about 1.5 – 2 finger lengths.
  • If you like crunchy mango with a sour taste, prioritize those with dark green, smooth skin, and when pressed lightly, they should feel slightly firm.
  • On the contrary, if you prefer less sour mango with a sweet taste, choose those with light yellowish-green skin!
  • Avoid choosing those with rough skin, as these are usually more fibrous and not tasty.

How to make Sweet and Sour Pickled Mamfruit

  • Prepare the ingredients

    After purchasing the mamfruit, peel it, and use a knife to cut the mamfruit in half. Next, prepare a bowl of water, add 3 tablespoons of salt, and soak the halved mamfruit in the bowl while rinsing for about 3 minutes to reduce its sap.

    Next, remove the mamfruit and place it in another bowl of clean water to soak for another 5 minutes. Then, take the mamfruit out and place it in a drainer to drain. Wash the chili peppers, remove the stems, discard the seeds, and then finely chop the chilies.

  • Boil the starfruit

    Place a pot on the stove, boil 400ml of water until it boils. When the water is boiling, add the starfruit and boil for about 10 – 15 minutes, then remove the starfruit and immediately place it in a bowl of ice water to help it retain its crunchiness. After that, take the starfruit out and let it drain completely.

  • Make the dipping fish sauce for starfruit

    Place a pot on the stove, boil 4 cups of filtered water (rice bowl) over medium heat, when the water starts to boil, add 1 cup of sugar (rice bowl) and stir until the sugar is completely dissolved, then turn off the heat.

    Next, add 60ml of fish sauce, the minced chili, 1/2 tablespoon of salt, and continue to stir well, taste the fish sauce to adjust the flavor, then let it sit for about 10 – 15 minutes for the syrup to cool completely.

  • Pickled Mango

    Fill the jar with mango glass jar, use a spoon to put the chopped chili on top of the mango. Then pour the fish sauce and sugar mixture over the mango until it is submerged.

    Seal the lid and store the mango in the refrigerator refrigerator for longer preservation. The pickled mango usually takes 1.5 – 2 days to be ready to eat.
