How to Make Sago Pearls

  • Mixing the Flour

    First, take a bowl, add 200gr of tapioca flour, and slowly pour in 100ml of boiling water while continuously stirring with chopsticks to prevent lumps from forming.

    Next, use your hands to knead the dough for about 5 – 7 minutes until it forms a homogeneous mass that no longer sticks to your hands.

  • Shape the tapioca pearls

    You place the dough on a flat surface like a cutting board, use a knife to divide the dough into 5 – 6 equal parts.

    Next, you take each piece of dough one by one and knead it for 1 – 2 minutes, then use both hands to roll it into a ball while simultaneously stretching it out until you achieve the desired size.

    Finally, use a knife to cut the dough into bite-sized pieces. Keep doing this until you finish all the dough!

    Tip: To prevent the dough from sticking to the cutting board, you can sprinkle a little tapioca starch on the board before shaping!

    After that, you place a pot on the stove with 1 liter of water and boil it on high heat. When the water boils, you add all the shaped dough into it, stir well with chopsticks, then cover the pot and boil for 15 – 20 minutes.

    When you see the dough becoming more transparent, it means it is cooked, so you turn off the heat, cover it, and let it sit for about 15 minutes before transferring the pearls to a bowl with 5 tablespoons of sugar, and use a spoon to mix it all together, and it’s done!

  • Mixing the dough

    First, take a pot, then add 210g of tapioca flour, 50ml of strawberry syrup, and 1 cup of boiling water (the type used for rice). Use a spoon to stir well, then knead continuously by hand for about 5 – 7 minutes.

    When the dough becomes elastic and chewy, and forms a homogeneous mass that no longer sticks to your hands, it’s ready.
