Making butterfly pea pearls
Put 60ml of water into a pot and boil on high heat. When the water boils, add 5g of dried butterfly pea flowers and 1 teaspoon of sugar, then boil for about 5 minutes to let the butterfly pea flowers release their color, then remove all the flowers and turn off the heat.
Add 50g of tapioca flour into a basin or a large bowl, then gradually pour in the boiling butterfly pea water. Use a spoon to stir evenly for about 3 minutes, then use your hands to knead the dough into a mass so that it no longer sticks to your hands.
Tip: If you find the dough a bit too wet while kneading, you can add a little more tapioca flour and continue kneading! -
Shaping is boiling the tapioca pearls
The dough after being kneaded into a block is pinched by hand into small pieces, then rolled into balls. You can sprinkle a little tapioca starch on the cutting board and your hands to prevent the dough from sticking.
After rolling the dough into round balls, place them in a bowl and sprinkle a little tapioca starch to coat a thin layer on the pearls to prevent them from sticking together.
Put 200ml of water into a pot, place the pot on the stove, and bring to a boil over high heat. Once the water is boiling, add the tapioca pearls and cook for about 10 minutes until the pearls float to the surface, then turn off the heat.
Remove the tapioca pearls and soak them in ice water for 10 – 15 minutes to make them chewy and then drain them in a basket.

The tofu is slightly rich, soft, and melts in the mouth, blending well with the fragrant and perfectly sweet syrup made with ginger. The chewy butterfly pea pearls are very enjoyable. It’s both delicious and simple, so remember to try it in the kitchen right away!
