- Fresh pig brain (pork brain) usually has a bright pinkish-white color, not turning any unusual colors and has a membrane covering it, looking shiny.
- When pressing with your hand, it should feel firm and elastic, while being moderately soft, not too mushy, and not leaking out.
- You should avoid buying pig brain that emits a strong fishy smell, or has dark spots and bruises, as this indicates that the brain has spoiled due to being stored for too long.
How to choose fresh green wormwood
- Fresh green wormwood will have a bright green color, not too mature, and small in size because it is still young; when processed, it will not have too much bitterness.
- You should avoid buying wormwood that is too dark green as it indicates that the wormwood has not grown naturally and has been sprayed with too many chemicals, and it is also bruised and wilted too much.
How to prepare Pig brain (pork brain) stewed with wormwood

Prepare the ingredients
First, with one pig brain you bought, rinse it with diluted saltwater for about 1 – 2 minutes to clean off any dirt, then let it drain.
For the wormwood, remove any wilted or damaged leaves, then use a knife to cut it into bite-sized pieces. After that, soak it in a bowl of diluted saltwater for 5 minutes, then rinse several times with clean water and let it drain.

Stewed pig brain with mugwort
Once the ingredients are prepared, you place a pot on the stove with 2 teaspoons of cooking oil over medium heat. When the oil is hot, add 200g of mugwort, and stir-fry evenly with a pair of chopsticks for about 2 – 3 minutes.
Then, you season with 1/2 teaspoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, and 200ml of water, stirring well once again.
When the water comes to a boil, add in 1 cleaned pig brain, cover the pot, and stew for 30 – 45 minutes over low heat.
Once all the ingredients are tender, you can adjust the seasoning to your taste, then turn off the heat and serve in a bowl to enjoy!
Tip: To save time, you can use a pressure cooker to stew the pig brain! -
