How to choose fresh sea snails
- To have fresh, delicious, and fatty snails, choose snails with the mantle close to the outside, the body of the snail when still tends to stick its head out, and when disturbed, it will retract inside and the lid will close tightly.
- Dead snails will have a rather unpleasant odor. Another way to check is to drop the snails into water; dead snails will float on top and their mouths will be raised.
- Avoid choosing snails that are too large because, according to experience, the larger the snails, the tougher and less sweet the meat will be. Therefore, you should take snails slightly larger than your thumb, which is the most suitable and delicious (choose medium-sized snails, thick mantle, fresh and firm).
How to cook Garlic Butter Snails

Prepare the snails
When you buy the snails, to clean out all the sand, soak the snails in salted water with 1 halved chili for about 1 hour. After that, rinse several times with water, shake the snails to let the sand settle down, then remove and let them drain.
Put a pot on the stove with about 500ml of water, add the snails and boil for about 2 minutes, then remove them.
How to clean snails effectively, free of sand:- It is recommended to soak the snails in rice water so that they can expel all the dirt quickly. If you cannot prepare rice water in time, you can soak them in cold water and add about 3 – 4 chilies for about 1 – 2 hours.
- You can also soak the snails in a mixture of lemon, vinegar, and chili. Just mix the above ingredients together and soak the snails, and they will quickly release the mud for cooking.
- Additionally, soaking the snails with metal objects like spoons or forks will also help the snails expel all the sand effectively.

Stir-fry the snails
Heat a pan on the stove, add 3 tablespoons of salted butter and sauté 1 tablespoon of minced garlic until fragrant. When the butter has melted and the garlic starts to turn golden, add the boiled snails and stir well. Season with 1 teaspoon of sugar and chili powder each, stir until the snails absorb the seasoning, then turn off the heat and serve on a plate.
