  • Choose razor clams with sandy yellow shells, not chipped, and you can see the smooth membrane inside the clam.
  • It is advisable to choose live clams, of large and uniform size as the meat will be plentiful and firm.
  • Fresh clams will have the smell of mud and seafood. Additionally, to check if the clam is still alive, you can place it in a basin of water; if you see the clam sticking out its tongue, it means the clam is still alive.
  • You should choose reputable seafood stores, supermarkets, or grocery stores to ensure product quality.

How to cook Butter Garlic Razor Clams

  • Prepare the razor clams and other ingredients

    To clean the sand and eliminate the fishy smell of the razor clams, soak them in diluted saltwater with 2 chopped chili peppers for 1 – 2 hours.

    Then use a knife to make a straight cut along the clam’s body, remove the clam’s meat, and rinse it 2 – 3 times with clean water.

    Peel the garlic, and chop it finely. Chop the remaining chili pepper. Wash the ginger, peel some skin, and slice it.

    How to clean razor clams from sand

    • Method 1: Soak the razor clams in clean water for 7 hours, changing the water every 2 hours.
    • Method 2: Soak the clams in rice washing water, adding 2 sliced or crushed chili peppers, soak for about 1 – 2 hours then take them out. Cut the clam’s body and remove the meat, rinse 2 times with water and let drain.

  • Boil the razor clams

    Place a pot on the stove over medium heat, add 1 liter of water, and the sliced ginger to boil.

    When the water starts to boil, add the razor clams and boil them briefly for about 3 minutes, then take the clams out and let them drain.

  • Sautéed Razor Clams

    Put a pan on the stove over medium heat, add 2 tablespoons of cooking oil and heat it up, then add minced garlic and minced chili to sauté until fragrant.

    When the garlic is evenly golden and aromatic, add 3 tablespoons of unsalted butter and let it melt.

    Season with 2 teaspoons of sugar, 1 teaspoon of seasoning powder, 2 tablespoons of oyster sauce, and 2 tablespoons of chili sauce.

    Stir well until the seasonings are completely dissolved and the sauce thickens.

    Add all the razor clams into the pan, sauté over medium heat for about 2 more minutes for the clams to absorb the seasonings, taste for seasoning, then turn off the heat.

    Tip: Do not sauté the razor clams for too long as they will release water, shrink, and lose their deliciousness.
